These are actually quite delicious, and a nice change from your regular fry. Sweet potatoes are high in vitamins & minerals, and because they are baked, they are low in fat.
4 sweet potatoes
1/4 cup olive oil
non stick cooking spray
salt & pepper to taste
1. Preheat oven to 400 degrees F.
2. Cut the sweet potatoes lengthwise into 1/2 inch thick strips. Toss with the olive oil & salt.
3. Coat a large cookie sheet with the nonstick cooking spray. Arrange potatoes in a single layer.
4. Bake the potatoes for 15-20 minutes or until golden brown on the bottom. Flip, and bake for another 15 minutes.
