This is one of the favorites at our house, even my kids love to eat these. They are individual size meatloaves, each baked in a little ramekin, topped with a sweet ketchup based sauce. Yummy!
Ingredients:
1 egg
3/4 cup milk
1/2 cup gluten-free quick cooking oats or breadcrumbs
1 1/4 cup shredded cheddar cheese (divided)
1 tbsp. gluten-free Worcestershire sauce
1/2 cup onion, diced
1 1/4 lb. extra lean ground beef
2/3 cup ketchup
1/4 cup packed brown sugar
1 1/2 tsp. prepared mustard
Directions:
1. Preheat over to 350 degrees F.
2. In a large bowl, combine the egg, milk, oats, 1 cup cheddar cheese (leave 1/4 cup to sprinkle on top later), Worcestershire sauce, onion & ground beef. Mix well & fill ramekins 3/4 full with meat mixture.
3. Combine ketchup, brown sugar & mustard. Top meatloaves with the sauce.
4. Bake uncovered for 30-40 minutes. Top with remaining shredded cheese, and bake until melted.

Yummy. I like meatloaf with baked potatoes and use creamed corn for gravy; salad on the side. ~ Margaret
@Anonymous Sounds delicious, Margaret! We usually have mashed potatoes. There is just something about mashed potatoes & meatloaf that go well together.
