Mmm…perfect side to a grilled supper!
1 lb. of new potatoes, cleaned & cut in half
4 carrots, peeled & cut into large chunks
2 tbsp. olive oil
2 cloves garlic, minced
1-2 tsp. fresh rosemary
1/4 tsp salt
pepper to taste
1. Preheat oven to 450 degrees F. Place potatoes & carrots in a mixing bowl. Sprinkle on salt and pepper. Add olive oil, rosemary and garlic. Toss until vegetables are well coated.
2. Spread potatoes out on a single layer of a baking pan. Roast for 40 minutes (stirring occasionally), or until potatoes are cooked through and browned. Serve immediately.
