Buttercream Frosting

I topped the Gluten-Free Chocolate Cupcakes with this wonderful buttercream frosting for my daughter & her friends. I think it was a great icing, not very sweet, but it piped onto the cupcakes beautifully, even on a very hot day.

    I think yellow frosting with beautiful sprinkles can brighten anyone’s day…will have to remember that when it’s -35*C here in winter. :p

    Adding another cup of p. sugar makes it a little sweeter, delicious!! If it's too thick just add a table spoon of water to get it back to the consistency you like!!
