(Gluten-Free) Filbert Gateau with Praline Buttercream – A Daring Baker Challenge

This month’s Daring Baker challenge was hosted by Chris of Mele Cotte. A Filbert Gateau with Praline Buttercream, from Great Cakes by Carol Walter. The first time I read this challenge, my heart fell. Another nutmeal cake. More buttercream. A sugar syrup. This all reminded me of the Opera Cake we made a few short months ago. I was rather disappointed with that. I was going to sit this round out, figuring the cost of the ingredients, plus the fact that it is July, and we just did a cake with these same components. But, I didn’t. I figured, I’ve still got more to learn, so I put on a smile, and went to work. Once I decided to make the cake, it was a lot of fun, and my heart fluttered as my hazelnut praline became praline paste, and the buttercream became this super light, sweet cloud of icing. Delightful. I really do enjoy working on these Daring Baker challenges, they give me a reason to make something out of the ordinary, and I like that.

The Filbert Gateau consisted of a Filbert Genoise, a flavoured sugary syrup, praline buttercream, whipped cream, apricot glaze, and a ganache to finish it off. It really did contain a lot of steps, but spread it out over a few days, and it is not a problem to get it finished without too much hassle.

 

 

The Verdict: Although I am pretty sure I will never make this cake again, it was a very delicious cake. It had great flavour and even looked alright. However, it was very time consuming, and nearly impossible to cut the one cake layer into thirds. I did enjoy the opera cake more than this one.

    Thank you everyone, it was a lot of fun to do (and eat). And Michelle, my hubby thought it looked like a birthday cake the way I had decorated it. I wasn’t sure if that was a good thing or bad. I’ll take it as good. :)

    I unfortunately ran out of time and didn’t get to do this month’s DB challenge… I figured this out only AFTER I bought all the ingredients… but perhaps seeing everyone else’s cakes will inspire me to make it this weekend :)
