I have to admit. I have never heard that strawberries and balsamic vinegar going well together. I’m still fairly new at using balsamic vinegar, I’ve only used it a few times, and was very unsure about pairing it with the sweet, juicy strawberries. After reading Kevin’s entry about the Strawberry Rice pudding, I thought this combination is something that I should really try. I was leery, and only did a small batch of strawberries (I didn’t want to waste those beautiful, juicy sweet berries with vinegar… did I??).
16 ounces fresh strawberries, hulled and large berries cut in half
2 Tbsp balsamic vinegar
1/4 cup white sugar
1/4 teaspoon freshly ground black pepper, or to taste
Place strawberries in a bowl. Drizzle vinegar over strawberries, and sprinkle with sugar. Stir gently to combine. Cover, and let sit at room temperature for at least 1 hour but not more than 4. Just before serving, grind pepper over berries.
The verdict…DELICIOUS!! I have absolutely no idea why I haven’t tried this earlier. The sweetness of the berries is really enhanced by the balsamic vinegar. If you have never tried this with your berries before, you should. Now I have to do more experimenting with this combination, it is a new found treasure.
