I love fresh peas from the garden, and sugar snap peas are no exception. They really can’t get any easier, as they are peas that you don’t have to shell, you eat the shell with the peas. Perfect! My sister-in-law gave us these sugar snap peas fresh from her garden, and we had them for supper immediately. They were delicious!
- 1 lb fresh sugar snap or snow peas
- 1 Tbsp vegetable oil
- 1/2 cup finely chopped fully cooked ham (optional)
- 1 garlic clove, minced
- 1/2 tsp dried thyme
- 1/8 tsp salt
- 1/8 tsp pepper
1. In a small saucepan, bring 1 inch of water and peas to a boil. Reduce heat; cover and simmer for 3-4 minutes or until crisp-tender.
2. Meanwhile, heat oil in a large skillet; add the ham, garlic and thyme. Cook and stir for 2 minutes. Drain peas; add to skillet and saute for 2 minutes. Season with salt and pepper.
