I hope that you’re all doing well in the new year. We had a really good Christmas holiday, straight through to the new year. We had a lot of time with our families, had our nieces & nephew all down for sleepovers (that’s 3 extra kids for 2 nights). We’ve gone sledding, skating (or trying to skate), rented movies & had a lot of really great family time. Unfortunately everyone got sick right at the end of holidays, but that’s how it goes, I guess.

Now, after having some time off after our Christmas baking extravaganza, it’s time to get back at posting recipes again! Here’s one that will ease you back into the kitchen. Rice Chex Muddy Buddies, also called Puppy Chow, is super simple, and takes only minutes from beginning to eating. :)

 

Rice Chex Muddy Buddies

Ingredients
  • 9 cups Rice Chex® cereal
  • 1 cup semisweet chocolate chips
  • 1/2 cup smooth peanut butter
  • 1/4 cup butter or margarine
  • 1 teaspoon vanilla extract
  • 1 1/2 cups confectioners’ (icing) sugar
Instructions
  1. Into large bowl, measure cereal; set aside.
  2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
  3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

    This is good to know! We’re going into the US later this month, so I’ll be sure to pick up some Rice Chex. Any other GF cereals I should know about? (That don’t cost $10 a bag?)
    The recipe looks yummy too, so I will be sure to try it once I have my stash.

    Thanks for reminding me about this treat. In the US we call it Puppy Chow – but Muddy Buddies is a great name. By any name – it is scrumptous! I’m adding the needed ingredients to my grocery list today!

    I love this recipe. Discovered it on the back of the box in February and had to make it. Only thing is I'm out of the Chex and need to make a trip to the States. But YUMMMY!!!

    Michie, I hear ya! I don't know why on earth they don't sell the Chex in Canada. To be able to buy a regular cereal, and not pay the high prices of GF cereals would be great! I really like the Corn Chex as breakfast too. Mmm…

    Has anyone written Chex to ask them to carry it in Canada? Maybe if all you Canucks got together and email bombarded them they'd realize they are missing out on a viable market share up there! New quest, Jeanine??

    Ha, Aine, I've emailed general mills canada, and was just told "we don't have them". DUH! Why? When? They weren't very friendly about it. :(

    Made this recipe last night for our Family Meeting, it was a big hit! One thing I did alter, though, I substituted 1 cup of peanuts instead of the 9th cup of cereal.
