Thank goodness it’s Friday! Time to kick back, relax, and indulge in some chocolate?? Hey, why not!
This cake was absolutely delicious! We had no leftovers.
The pudding sauce at the bottom of the cake is sweet, rich & creamy. Delicious!!
Ingredients:
- 1/2 cup brown sugar
- 1/4 cup cocoa
- 1 cup rice flour mix (see NOTE)
- 1/2 tsp xanthan gum
- 2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup brandy (or milk)
- 1/4 cup milk
- 3 Tbs melted butter
- 1 egg
- 2 tsp vanilla
- 1/2 cup brown sugar
- 1/4 cup cocoa powder
- 1 1/4 cup boiling water
Directions:
- Preheat oven to 350 degrees F.
- Mix together 1/2 cup brown sugar, 1/4 cup cocoa powder, flour mix, xanthan gum, baking powder, and salt.
- Whisk in brandy, milk, melted butter, egg, and vanilla.
- Pour into greased 2 quart casserole dish.
- Mix together 1/4 cup cocoa powder and 1/2 cup brown sugar. Sprinkle evenly over the tops of the batter, covering completely. Pour boiling water evenly over top, and bake 20-25 minutes, until cake is still a bit jiggly but starting to crack on top. Let cool 10 minutes, and top with whipped cream or vanilla ice cream.
NOTE: Flour mix is 2 cups brown rice flour, 2/3 cup potato starch & 1/3 cup tapioca starch.

Yum. I used to make the regular recipe for my family. It wasn’t as good leftover, and then I cut it when I was alone. Now it’s gluten-free I can have it again. I have cooked it in the microwave and will try it with this too. – Margaret

Thanks for the feedback, everyone! So far, I'm pretty happy with the new look, although I may be tweaking it a bit here and there.
Unfortunately, the only way to keep those other recipes & keep them separate from the gluten-free ones totally, would be to have another blog, and I can't do that. However, a lot of these recipes are naturally GF, or made GF by using GF products (like soy sauce & pasta & cream of mushroom soup, for instance).
