This dessert is perfect for your summertime barbecues. With nearly no prep time, and no oven to heat up the house, it can easily be made at the end of a hot, busy summer day.
Ingredients
- 4 ounces cream cheese, softened
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1 pinch of nutmeg
- 1 small pineapple, peeled, sliced & cored
- 2 tablespoon butter, melted
- 1/3 cup brown sugar
- 2 tablespoon chopped pecans
Instructions
- Using a hand-held mixer, blend the cream cheese, 1/3 cup brown sugar, cinnamon and nutmeg. Set in the fridge until you are ready to use it.
- Place your 4 peeled, cored pineapple rings on a plate. Using a pastry brush, brush one side of the pineapple with melted butter, and sprinkle with brown sugar. Flip the pineapple slices over, and repeat.
- With your grill preheated to a medium-high heat, place pineapple slices on the oiled grill. Grill, without moving, for 5 minutes. Flip, and grill the second side for 5 minutes.
- Serve Philly Grilled Pineapple on a plate drizzled with chocolate sauce, and top each slice of pineapple with 1 Tbsp of the cream cheese mixture. Top with 2 maraschino cherries (optional). Serve immediately.
- The top may be sprinkled with chopped pecans, and a light dusting of fresh nutmeg before serving.
