Last summer we started to make some virgin Pina Colada drinks for the kids to enjoy after they were tuckered out from splashing around in the pool. Ever since I got my new Kitchenaid blender, which I LOVE, we’ve been making a lot more drinks that use ice cubes as the base (like these Frosty Mochas). I can not afford some of the high end blenders that are available today, but I love my Kitchenaid one. It can make a pitcher full of snow from ice cubes with no water added. That is something my $30 blender could never do. So, when making a drinks now, we get a nice, smooth drink, not a grainy drink like my old blender made.
Since the drinks are such a hit with the kids, when I was trying to think up flavour ideas for my Ice Pop week, these Virgin Pina Colada Ice Pops were an immediate yes. If you’re really impatient, you can blend this with some ice, and enjoy it as a drink, but as popsicle, it’s also really, really good. Since they use coconut milk, they are dairy free as well. They are super creamy, and everyone loved them.
- 1 can (400 ml) coconut milk
- 1/2 cup (approximately) fresh chopped pineapple
- 1/3 cup granulated sugar
- 1 cup pineapple juice
- 1/2 teaspoon coconut extract
- Place all ingredients in a blender. Blend until smooth.
- Pour into ice pop molds or paper cups. Insert sticks and freeze for at least 4 hours, or overnight.
- Run molds briefly under warm water to release pops.Kick back and enjoy!
