When I was contacted by Anyday Magic to create a creamy casserole for The Ultimate Casserole Challenge, my mind turned to something savoury. A kicked up baked cream corn maybe? Or perhaps some sort of a loaded scalloped potato dish? When I heard casserole, my mind was stuck on savoury thinking. While grocery shoppoing with my daughter one day she just says “can’t you make a dessert casserole?” Holy cow! Why didn’t I, the maker of all things sweet, think of that?!? I contacted the organizers of the contest to make sure it was Ok with them, and then began dreaming up sweet casserole ideas.
A casserole, by definition, is basically a dish where you mix all your components together ahead of time, place them in a oven proof dish, bake, and serve them from that dish. Based on that description, I began working on a sweet gluten-free bread pudding recipe.
My first two attempts failed. I had an idea of mixing chocolate and fresh cherries with a creamy boozy-vanilla sauce. Only, my creamy vanilla sauce kept looking like scrambled eggs to me, and the flavours just weren’t doing what I was hoping for. So, I decided, midway, to change course.
Butter tarts. Yep, my dessert casserole was going to have the flavour of butter tarts. Although I will admit to not eating butter tarts until a few years ago, they have since become a thing of enjoyment for me. Butter, syrup, and brown sugar loaded with plump raisins and pecans. How can anything about that be wrong? I decided to incorporate those flavours into this month’s Creamy Casserole Challenge, and created these decadent Gluten free Individual Maple Butter Tart Bread Pudding topped with a Maple Caramel Sauce.
