Gluten Free Vanilla Bundt Cake

Minneapolis, Minnesota is about 8 hours, 3 bathroom breaks, and one border crossing away from where I live. Every time we go we discover something new about the Twin Cities. After three years of visiting we’ve developed some special destinations. There’s Nickelodeon Universe for the kids, Cafesjian’s Carousel and Barnes and Noble for my husband. And this year I discovered one for me.

Minneapolis is one of the top 10 destination cities for people who have to eat gluten-free. It’s also the home of the Nordic Ware factory. This was something I had never realized until after attending the Food Bloggers of Canada Conference. Nordic Ware was a sponsor of the conference, and I received some complimentary pieces . Funny thing is, I’ve always had Nordic Ware products in my kitchen but never made the connection with Minneapolis. Once I realized this though, we added the Nordic Ware Factory Outlet Store to our vacation plans.

Having preplanned the drive from the hotel to the factory outlet on Google Maps, we were set! Or at least we thought we were. It ends up that Google Maps doesn’t really care whether or not you are familiar with the roads you are driving on, or that the traffic is heavy at that time of day, or that there is a car broken down in a lane way up ahead, causing more delays and backed up lines. But, by carefully following the directions, like a pirate looking for the X on a treasure map, we knew we’d found our destination when we spotted a large smoke stack with the Nordic Ware logo painted on it. We were there!

To say that I enjoy browsing kitchen ware stores is an understatement – I absolutely love it! Much like my kids in a toy store, I have the same awe and feel the need to touch and pick up everything in a kitchen wares store. The factory outlet store is beautiful. Besides there being the full line of Nordic Ware items, they also have a kitchen where they teach a variety of cooking classes. Being the frugal gal that I am though, I was amazed with the 3 large carts of “seconds” at the end of the store where they sell irregular and discontinued items. This company obviously has very high standards, because a lot of the irregular items, which were 40-50% cheaper, really had nothing wrong with them. Maybe a small mark on the outside of the pan, or a small imperfection on the top. I checked the items I purchased and determined that none of the imperfections would hinder my baking at all. If you’re ever in Minneapolis, be sure to try to squeeze a visit to the Nordic Ware factory outlet in your schedule, you never know what goodies you might find. For those that never travel through the Twin Cities, you can find Nordic Ware in a number of retail outlets, including Amazon, William-Sonoma, Bed Bath & Beyond, and many, many more. The hardest decision you’ll make is what to buy. I’ve been playing with my newly purchased Nordic Ware products for the last month, and love everything I’ve bought.

After much browsing and contemplating, I decided to treat myself to: (top left) 9×13 rectangular cake pan, (top center) heavy weight 12 cup Bundt pan, (top right) 10 cup leak-proof springform pan, (middle left) set of 6 Bundt measuring cups,  (middle right) a beautiful Heritage Bundt pan, (bottom right) Grand Popover Pan (bottom middle) bakers half sheet baking pan, (bottom right) silicone whisk, Once we returned home, I began playing with my new kitchen ‘toys’. Who can resist new measuring spoons, whisk, and baking pans? Not me! Since I had a full bottle of Homemade Vanilla Extract that I couldn’t wait to use, I decided to create the perfect gluten free Vanilla Bundt Cake.

This cake is moist, full of vanilla flavour, and has the perfect crumb for a Bundt cake. The journey to the perfect Vanilla Bundt Cake, similar to the drive to the Nordic Ware Factory Outlet, was no smooth ride. I tested numerous cakes, tweaked, and tested again. Along the way I made a few other great discoveries before I finally arrived at the perfect taste and texture for this Vanilla Bundt Cake. The perfect thing about Bundt cakes is that they don’t require any frosting to make them “company-worthy” fare. A simple sprinkling of confectioners’ sugar, or a drizzle of a simple glaze, is more than enough to make them presentable.  Take a look at the variety of Bundt pans that Nordic Ware makes. Gluten Free Vanilla Bundt Cake
Recipe type: Dessert

Serves: 12-14
Consider this the "little black dress" of cakes. You can dress it up or keep it casual, depending on how you want to serve it.
  • 1 cup white rice flour
  • 1/2 cup brown rice flour
  • 1/2 cup potato starch (not flour)
  • 1/4 cup tapioca starch
  • 1/4 cup sweet rice flour (also called glutinous rice flour)
  • 1/4 cup dry milk powder
  • 1 tablespoon baking powder
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1 1/4 cup unsalted butter, cool but not cold
  • 1 1/2 cups granulated sugar
  • 4 large eggs, room temperature
  • 3 tablespoons good quality vanilla extract
  • 1 1/4 cup milk, cool but not cold
  1. Remove the butter, eggs, and milk from the fridge 20-30 minutes before you begin mixing the batter to give them a chance to warm up slightly.
  2. Preheat the oven to 325 degrees F. Prepare a 10 cup Bundt pan by greasing it, and sprinkling it with white rice flour, turning and tapping the pan until the inside is completely covered. Tap out the excess flour.
  3. Whisk together the first 9 ingredients until they are thoroughly combined. Set aside.
  4. In the bowl of a stand mixer, beat the butter and sugar on medium speed until fluffy and light in colour, this takes about 4-6 minutes. Scrape down the bowl.
  5. Whisk the eggs to break them apart. With the mixer on low speed, slowly pour the whisked eggs into the butter/sugar mixture. This should take about 40-60 seconds. Scrape the bowl down again, and add the vanilla extract. Increase the speed to medium, and beat until the batter looks nice and smooth, scraping down the sides as necessary.
  6. With the mixer on low, add in half of the dry ingredients. Mix until nearly blended, then slowly add the milk. Add the remaining dry ingredients, scrape the sides of the bowl, then beat for 30 seconds on medium speed.
  7. Pour the batter into the prepared Bundt pan, spreading the batter even in the pan. Give the pan a few good taps on the counter to ensure there are no air bubbles trapped at the bottom of the batter.
  8. Bake in the preheated oven for 60-65 minutes, or until a skewer inserted into the middle of the cake comes out clean and the top bounces back when gently pressed.
  9. Move Bundt pan to a wire rack, and let the cake cool in the pan for 20 minutes. Place a cooling rack on top of the pan, and carefully turn over, giving the pan a little shake if necessary to release it from the pan.
  10. Let the cake cool completely before serving. The cooled cake can be stored on the counter for up to 3 days if it has been wrapped in plastic wrap.

    There are only two seasons in the Minneapolis area, winter and road construction! You hit road construction, I’ll bet it took you a long time to get there! Unfortunately google does’t tell you what way and when the locals would do it. Glad you liked the factory store, any other highlights besides Barnes and Noble that you can tell us about?

    I live here and don’t find it to be all that gluten free friendly, in fact down right hostile in certain places. People don’t understand celiac disease and often act as if I am asking for the moon when I am just asking for info, for instance, what do you have that I can eat. Also many, not all, act as if I have a choice. Feeling it is a fad. And so it goes.

      We love Como Park Zoo, the fabulous old Carousel there is a must for us, we’ve visited the Science Museum of Minnesota a few years in a row, always a great display. Of course Nickelodeon Universe for the kids (while Mom’s getting woozier by the minute 😉 ), we’ve checked out Rice Park, and the Sculpture gardens. We eat out once a day (supper) when we’re vacationing, and this last year we loved Red Robin Gourmet Burgers in Apple Valley (I would drive all the way there just for that!), Pizza Ranch is always a favourite, Pizza Luce, we ate at Rojo Mexican Grill, they were very careful & accomodating. We use the Find Me Gluten-Free app, and it always tells us places around us that offer gluten-free food, and what others have thought of it. Always be sure to explain that you NEED to eat gluten free, is what we’ve found.

        OMYGOSH Jeanine, this is a winner. I jumped up from the computer and made it – had farm friends in the field harvesting soybeans and wanted to bring them a treat for midafternoon coffee. It mixed up perfectly, baked perfectly, came out perfectly, and was absolutely, totally amazing. I brought out 4 pieces still steaming, and they adored it. I proceeded to eat 2 more in the house after coffee. It’s great yesterday again cold from the refrigerator; I froze 1/3 just to get it out of my reach, so will still have treats again after harvest! Was thinking as I made it that it might be good with teeny chocolate chips stirred in – will try that next time to see if they’re light enough that they won’t make the batter fall.

        Pizza Luce, my favorite! Places with kids, on West 7th by the Science Museum and the XCEL arena there is Burger Mo’s , nice patio, Patrick McGovern’s also nice patio and kid friendly. Not so kid friendly, my favorite place is LaGrolla (Italian) on Selby. See Garrison Keillor’s Prairie Home Companion if he is in town, try to get tickets ahead!

    There are many nordicware products I would be giddy to get! I love their specialty bundt pans, like the 3-D great pumpkin, as well as their classic bundt pans.     I would love and could really use the Pro Cast 12 inch Jumbo Fryer with Lid. I LOVE the different cast iron cookware I have gathered in recent years! I do have a
    harvest gold heavy bundt pan I got 37 years ago as a wedding gift. It’s a little worse for wear but still bakes a lovely cake. It has been relegated under the basement stairs since I had to go GF….think I’ll have to get it up again!

    This recipe would be great for a church pot-luck or bake sale [we have several other members who are gluten-free], but I think I gave away my bundt pan after I figured out that gluten was responsible for my life-long [over 60 years by then!] digestive problems. Thanks for going to the trouble of perfecting recipes for us to use; I made the apple crisp recently, and plan to use that recipe again substituting frozen rhubarb for some of the apples, but baking season [as opposed to air conditioning season] is slow in arriving in the Texas Gulf Coast area.

    I would love to win some new bakeware, the video of how the Nordica Ware is made was very interesting and the Bundt pan would be wonderful, I think the pan cake pan would be nice to have also, and I could use a new heavy duty saucepan too.
    I used to make Bundt cakes a lot but now with CD I’m not sure if I should use my old one. It’s not made of metal or aluminum but it’s some type of hard plastic, your Vanilla Bundt cake looks delicious, and I look forward to making it, need to go shopping and get some milk powder, and maybe a new Bundt Pan too.

    Grand kiddos are going to love this recipe-they are all about cakes! We have been gluten-free as a family for quite a while as everyone has various intolerances or celiac.     I’m torn – either the English shortbread pan OR the scone pan – hmmmm decisions decisions……..

    Have you tried this cake with different pans? I find that my oven just doesn’t like bundt pans – I’ve never had one work out in it!

    There is just so much to choose from! I would love a heritage bundt pan. I don’t own any bundt pans. The procast 12 inch wok would be great. I love making stir fries.     Oh man, the 3-D Great Pumpkin Bundt Pan Set is a must have… imagine, you could make pumpkin spiced pumpkin’s in 3-D – how fabulous would that be!! Love the Smiley Face Pancake Pan too, happy little pancakes smiling through the butter and syrup. Yum! Oh, I’m swooning… the 14 inch Restaurant Asian Wok. We like to have a stirfry night once a week where everyone makes their own stirfry. Takes the pressure off mom and they all like to use their own spices to create their own unique stirfrys.Thai Coconut Chicken anyone? Yum.
