You may have heard the term “food hack” being used lately, but what is a food hack? A food hack is simply when you use an item in a different way than originally intended, often creating a quick and easy shortcut. It’s like making these taco shells with plain tortillas, or these Easy Cheesy Sticks using a slice of bread. Udi’s Gluten Free recently ran a “What the Hack” contest, where people were asked to create a food hack using any of Udi’s products. Check out the variety of ways their customers found to use Udi’s products – there are some very creative people out there! Food hacks have become quite popular as people look for quicker and easier ways to feed their family. In fact, Udi’s has created an entire Pinterest board full of brilliant food hacks – some pretty neat ideas there!

Apple Crumble Pizza from The Baking Beauties #WhatTheHack   I was asked by Udi’s to create a food hack using their products to inspire you guys to think outside the cookie cutter. I decided to use their Pizza Crust and Maple Pecan Chocolate Chip Cookies to make this delicious dessert pizza. This Easy Apple Crumble Pizza includes a layer of slightly sweetened cream cheese, and a wonderful homemade apple filling. You are welcome to use bought pie filling if you have a brand you enjoy. I wanted this to be more apples than filling, so I opted for homemade.

Easy Apple Crumble Pizza #WhatTheHack
Serves: 12-16
Using store-bought pizza crust and cookies makes making this dessert extremely easy! To make prep time shorter, the apple filling can be made ahead of time, or you can use your favourite canned apple pie filling.
  • 2 Udi's pizza crusts, baked according to directions and cooled
Cream Cheese Layer:
  • 6 ounces softened cream cheese
  • 1/2 cup confectioners' (icing) sugar
  • 1 teaspoon maple extract
Apple Filling:
  • 1/2 cup brown sugar, packed
  • 1/2 cup water
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 large Gala apples (or other apple that keeps its shape when cooked), peeled, cored, and sliced
  • 1 tablespoon water mixed with 1 tablespoon cornstarch
  • 8 Udi's Maple Pecan Chocolate Chip cookies, chopped
  • 1/3 cup confectioners' (icing) sugar
  • 2 teaspoons milk
  • 1/2 teaspoon vanilla extract
Cream Cheese Layer:
  1. Beat together the cream cheese, 1/2 cup confecterions' sugar, and maple extract. Divide between the two crusts, and spread to cover the crusts.
Apple Filling:
  1. In a large skillet, combine brown sugar, water, butter, lemon juice, cinnamon, and nutmeg. Bring the mixture to a boil, and add the apples. Cook for 5 minutes, stirring frequently. While the mixture is still bubbling, stir in the water/cornstarch mixture, and stir to distribute evenly. Continue cooking until the sauce has thickened. Remove from heat and allow to cool to room temperature before adding to the pizzas.
  1. Once you have added the apples on top of the cream cheese layer, add a layer of cut up Maple Pecan Chocolate Chip cookies.
  1. Stir together 1/3 cup confectioners' sugar, milk, and vanilla extract. Add more milk, 1/2 a teaspoon at a time, if it is too thick. Drizzle on the pizzas.
  2. Cover and refrigerate pizzas for at least 1 hour before serving. These pizzas keep well, and can be made in advance without a problem.

    I once made an ice cream “bread pudding” using Udi’s cinnamon rolls. It was ridic. Way too sweet but would totally make again anyway. Since my taste clearly runs toward sweet + sweet + more sweet, I LOVE what you did with the pizza crust!

    A plain tortilla baked in a “bowl” to make an awesome taco salad with everything I like: lean meat, medium sauce, pinto beans, shredded Colby-Jack cheese, sliced jalapeno, chopped Vidalia onion, sour cream, homemade guacamole, topped with shredded mixed greens — yummy!

    This fruit pizza is a great idea. I would use Udi’s pizza crust as you did, but I would use my home canned apple pie filling on it.

    I’d line GF cinnamon roll pieces in a muffin tin, then add cooked crumbled bacon, top with scrambled eggs & cheese shreds. Serve w/another warm GF cinnamon roll topped with sweetened cream cheese!

    I use your regular white bread to make french toast at least once a week… we also use it to make seasoned breadcrumbs and we use burger/sandwich buns to make mini pizzas. So many options! Oh, yes, my favorite “hack” has been to crush the brownie bites and use them for a crust for mini cheesecakes, made with reese’s peanut butter cups mixed in and on top. AMAZING!!

    I would use the Maple Pecan Chocolate Chip cookies to make mini cake crusts. Crush the cookies, press into muffin pans, Pour yogurt into muffin pans, Freeze. Yummy GF dessert!

    Wow, it would be hard to decide what to make. I think your apple crumble pizza would probably be what I’d make. Or maybe my chicken chili lasagna which uses flour tortillas and which I haven’t made in ages because I’m too lazy to make my own gf flour tortillas. Another idea — ice cream sandwiches using the maple chocolate chip cookies, filled with vanilla walnut ice cream! I really miss ice cream sandwiches.

    I love your apple pie pizza idea but, I make a French toast bake with udi’s white bread.
    I slice the bread into strips and use lots of cinnamon and berries. 45 min later, bam! Warm and yummy goodness in your belly. Great for breakfast, lunch, dinner or dessert!!

    I would use their tortillas to make gf chocolate chimichangas! You put a Hershey’s bar (or any chocolate) in the center of a tortilla, fold it over and seal with egg mixture, and pan fry in a few inches of oil. Serve hot sprinkled with cinnamon sugar and topped with whipped cream! Yum!!

    I love to hack Udi’s double chocolate muffins by turning them into a Black Forest trifle :) I slice up the muffins, layer them with tart cherries, whipped cream and chocolate pudding. Even my non-GF family loves it!

    I have never had Udi’s but I have heard nothing but great things about it. Bread makes me sick. I am not gluten intolerant but I have a reaction to another ingredient in bread type foods. I want to try it all!!

    i would use udi products for both the main dish and dessert..
    bbq hamburgers made with their buns..and cesar salad..croutons
    made with their bread lightly olive oiled with garlic..and toasted…
    to finish..i would make a version of your apple crumble but use nectarines
    or peaches..

    Cinnamon sugar tortilla chips, ice cream sandwiches, croutons (which i kind of miss..) snicker doodles in a crumb topping for blueberry cobbler… i’d better stop.. i’m making myself hungry.. :)
