Welcome to August! Wow, where on earth is the summer going? We’ve been having a fantastic summer so far, I just can’t believe how quickly it is flying by. Strawberry Mango Salsa
The kids and I went berry picking at a U-pick earlier this week, and we came home with 5 large baskets of strawberries. I’ve cooked some jam, cooked some more jam, and some more jam (my kids love strawberry jam, what can I say?). I’ve also frozen some berries whole in glaze. My Mom does this trick. The packets of glaze that you can buy at the grocery store, the one you just mix with sugar and hot water, that’s the glaze that we use. Creamy Asapargus Soup
I know this soup may not look like much, but it is so delicious. The adults loved it, the kids loved it, what more do you need to make a great soup? This soup did have the asparagus tips in there, but you know what? They sink. So, although they were there, they just didn’t want to be photographed. With spring being the time for asparagus, I hope you will give this soup a try, I think you’ll really enjoy it.
Waldorf Inspired Quinoa Salad
This salad isn’t a Waldorf salad in the traditional sense, but it takes a lot of the same great flavours of a Waldorf salad, and combines it with the power-house seed, quinoa. I made this for supper one day while we were having BBQ beef ring and potato salad, it was like summer.
