Strawberry Mango Salsa

The kids and I went berry picking at a U-pick earlier this week, and we came home with 5 large baskets of strawberries. I’ve cooked some jam, cooked some more jam, and some more jam (my kids love strawberry jam, what can I say?). I’ve also frozen some berries whole in glaze. My Mom does this trick. The packets of glaze that you can buy at the grocery store, the one you just mix with sugar and hot water, that’s the glaze that we use. Waldorf Inspired Quinoa Salad

This salad isn’t a Waldorf salad in the traditional sense, but it takes a lot of the same great flavours of a Waldorf salad, and combines it with the power-house seed, quinoa. I made this for supper one day while we were having BBQ beef ring and potato salad, it was like summer. Greek Quinoa Salad

Yum! If I had the ingredients on hand, I’d make this salad again. But, I don’t have any feta cheese. Or quinoa right now either. Shoot, guess I’ll just have to be patient and wait a little longer.  We (read “the adults”) really loved this salad. I can’t wait until the summer, when I know I will make it more often. It is a great cold salad, although I’m sure if you were impatient, you could eat it warm as well.

Fabulous Fruit Dip

The other day I was looking for a fruit dip. While we were at the grocery store, my boy asked if we could buy a pineapple. Both he and my daughter pick pineapple off of their pizza, so I thought…sure! Then you can eat pineapple, and see that it really is good. Quinoa and Black Beans

We had this for supper last night, together with Salsa Chicken and let me tell you, I’m really looking forward to having the leftovers for lunch. Before this past summer, I’d never had quinoa (pronounced keen-wah) is like a gluten-free super food. It is loaded with protein and other vitamins & minerals. It cooks up really quickly, and depending on the seasonings used, can be mild, spicy, sweet or savoury. Winter Fruit Salad with Lemon Poppyseed Dressing

Alright, I know, it’s a lot of words in that one, but the flavours are worth saying all of that. I have made this salad twice in the past week. Once for a family gathering, where it was entirely devoured with everyone giving it two thumbs up, and again to get a decent picture of it. I was glad that I got to make it again, I served it with some chicken on the side, and it was a great light supper. While the princess & the pirate didn’t enjoy this supper, the adults did.

This recipe was submitted by my Mom. It is a fantastic twist to a regular jello salad. The flavours are really great, and the sour cream doesn’t make it sour, but rather, makes it very creamy. Delicious!
