Catalina Dressing
We use quite a bit of Catalina salad dressing at our house. Mostly when we have taco salad. When I had that on the menu for the evening, and realized that I didn’t have any dressing at home, I looked into my cookbooks. Broccoli Apple Salad
I’m sure we’re all familiar with the broccoli & cauliflower salad that sometimes has bacon or raisins in it. This recipe is similar to those recipes, but I think it is bumped up a notch. The dressing is cooked, but don’t let that stop you from making it. It is a little bit more work, but the dressing is SO delicious, you won’t regret it! Trust me! Avocado, Tomato and Mango Salsa
This fresh salsa is so delicious, and so simple to make too. I’ve made it 4 times already, and loved it each and every time! The mango adds a nice sweet element, that offsets the heat of the jalapeno pepper perfectly. The lime juice in the dressing adds a nice tang as well. All in all, this is a delicious salsa, and is great with chips, or on top of chicken or fish. It even keeps in the fridge for a few days, so no need to eat it all in one sitting. Cooking With Kids – Mexi-Bean Dip
Wow, this last week has been a busy one! We never even got around to doing our Cooking with Kids in time for Monday this past week. Sorry about that! Black Bean and Corn Salad
I have been playing around with different salads this summer. They are great because they can be made ahead, which makes them great to take to a barbecue or even camping. Blueberry Chicken Salad
I’ve said it before, and I’ll say it again. Salads that can be thrown together, using whatever you have in the fridge or garden at the time, are the PERFECT summertime meal! this salad will make a great lunch or light supper. The combination of chicken with the celery, pepper, blueberries and lemon yogurt were really, really good. I think this recipe could be tweaked a bit more, creating new versions. Sweet Spinach Salad
It’s summer here. In summer it’s great to be able to throw together a salad, top it with some grilled meat & have that as your main course. They are great because they can be made ahead and transported to picnics or barbecues too. Chicken Salad
This recipe was initially called “Holiday Chicken Salad”. I am thinking the one who named it was thinking of Christmas, because of the dried cranberries. However, I would say this works quite well as a summer holiday (as in vacation) salad as well. The flavours really went very well together, and it made a great chicken salad, either on its own, or in a sandwich. I think that salads that use a combination of meat, fruit (dried or fresh), vegetables & nuts coated in a mayonnaise (or Miracle Whip) based dressing are fantastic. The combinations are endless. Egg Salad Sandwiches
