Bagels. When you are on a gluten-free diet, having a good bagel can be a challenge. In the past year, I have found some fantastic store bought bagels, but they can cost up to $8 for 4 of them. When the cooler temperatures hit us, I like to change up our breakfasts. Instead of cereal and cold milk, it is nice to have a nice warm, stick-to-your-ribs breakfast. If you have been reading here for a while, you will know that I really love pancakes and waffles. Thank goodness the kids do too, they would never turn down pancakes or waffles, whether it be for breakfast, lunch or dinner. Gluten Free Pumpkin Crepes

I truly do love all things pumpkin, and the other day when my son asked me if we could have crepes, I decided to try my hand at making them pumpkin crepes. I’m not sure how that happened. All things started out normal, then the next thing I know, I’m reaching for my jar of pumpkin puree! However, they were a huge success and everyone’s crepe cravings has been filled. These would be really great with some whipped cream in them, but we kept things simple and just served them with some maple syrup.

Gluten Free Mocha Waffles

I know I teased some of you on the Baking Beauties Facebook page with these waffles a long time ago, but then I got side tracked and nearly forgot about them. I say nearly, because well, how could you forget something so delicious? These waffles have a beautiful chocolate/coffee flavour to them, they are super easy to make, and are nice and light. What more could you want? Another cherry?

Gluten Free Vanilla Scones

These light, fluffy, vanilla-y scones are sure to help you push through this Monday morning! Or a Wednesday meeting, or even a Friday afternoon. They are that good!
