Gluten Free Pumpkin Crepes

I truly do love all things pumpkin, and the other day when my son asked me if we could have crepes, I decided to try my hand at making them pumpkin crepes. I’m not sure how that happened. All things started out normal, then the next thing I know, I’m reaching for my jar of pumpkin puree! However, they were a huge success and everyone’s crepe cravings has been filled. In my pre-gluten free days, I used to make a pretty mean biscuit. The kind that Aunt Bee would serve to Opie. The kind that you could use to clean your plate after a meal. Gluten Free Mocha Waffles

Let Mom have her coffee and her waffle all in the same bite with these Mocha Waffles.

I know I teased some of you on the Baking Beauties Facebook page with these waffles a long time ago, but then I got side tracked and nearly forgot about them. I say nearly, because well, how could you forget something so delicious? These waffles have a beautiful chocolate/coffee flavour to them, they are super easy to make, and are nice and light. By now, it should not come as a shock to you that I love pancakes. I’m always trying out new ways to combine flavours, textures, and in this case, methods. These pancakes are not your normal baking powder and baking soda pancakes, these get all their fluffiness from the yeast that is added to the batter.
