It is Gluten-Free Pancake Tuesday
If you have been following this blog for a while already, you will know that I LOVE pancakes! We have them quite often on a Saturday morning, or a Sunday brunch/lunch, or even for a quick weeknight supper. I love them topped with maple syrup, berries, whipped cream, or apple sauce (my new favorite). My children share my love. When I start frying pancakes, they come running from all ends of the house and yell “Pancakes!”. My husband, although not a lover of pancakes, is no longer a hater either. He’s tolerant with our enjoyment of the little fried cakes, … Continue reading
Gluten-free Gingerbread Waffles with Pear Sauce
If you have been reading here for a while, you will know that I really love pancakes and waffles. Thank goodness the kids do too, they would never turn down pancakes or waffles, whether it be for breakfast, lunch or dinner. These waffles had a great gingerbread flavour, but because of the molasses in the batter, you have to be sure to grease your waffle iron. Mine is a non-stick iron, but these still wanted to hold onto the griddle a little. So, have your spray bottle of oil ready when making these. Although you could serve these pancakes with … Continue reading
Gluten Free Pumpkin Crepes
I truly do love all things pumpkin, and the other day when my son asked me if we could have crepes, I decided to try my hand at making them pumpkin crepes. I’m not sure how that happened. All things started out normal, then the next thing I know, I’m reaching for my jar of pumpkin puree! However, they were a huge success and everyone’s crepe cravings has been filled. These would be really great with some whipped cream in them, but we kept things simple and just served them with some maple syrup.
Big, Fluffy, Gluten-Free Buttermilk Biscuits
In my pre-gluten free days, I used to make a pretty mean biscuit. The kind that Aunt Bee would serve to Opie. The kind that you could use to clean your plate after a meal. The kind that were great for dinner, brunch, or breakfast, topped with cheese and jam or just a dab of butter. I missed those. I’ve tried to convert my old recipe, and it just did not work well. But, since I’ve been playing around with the scones recipes lately, I realized that I could tweak that recipe to make some great biscuits to go with … Continue reading
Gluten Free Mocha Waffles
I know I teased some of you on the Baking Beauties Facebook page with these waffles a long time ago, but then I got side tracked and nearly forgot about them. I say nearly, because well, how could you forget something so delicious? These waffles have a beautiful chocolate/coffee flavour to them, they are super easy to make, and are nice and light. What more could you want? Another cherry?
Gluten Free Vanilla Scones
These light, fluffy, vanilla-y scones are sure to help you push through this Monday morning! Or a Wednesday meeting, or even a Friday afternoon. They are that good! Using a the seeds from a scraped vanilla bean really adds a nice layer of flavour, but if you don’t have access to vanilla beans (which, by the way, I order online) you can use 2 more teaspoons of a good vanilla extract as well. I love seeing the little vanilla flecks in the scone & icing drizzle. To make these scones extra light, I used a food processor to mix the … Continue reading
Cookbook Review ~ Gluten-Free in Five Minutes
I get contacted occasionally to test out new cookbooks. I enjoy this little perk of blogging, because it gives me a chance to see what is out there, and lets me give YOU my honest opinion of a book. You never know. Sometimes I am pleasantly surprised when I get a new cookbook. Enters Roben Ryberg‘s new cookbook “Gluten-Free in Five Minutes“. I will admit to you, I was very hesitant to try this book. I flinched a little when I read the words “Make ‘Em in Your Microwave”. Not much good has ever been baked in the microwave, much … Continue reading
Gluten-Free Lemon Cornmeal Waffles with Strawberry Rhubarb Syrup
Today is National Waffle Day. Seriously, it is! Any day is a good day to have waffles to me though, I don’t need an excuse. Oddly enough, I also don’t think of waffles as a breakfast food, since we have them for supper more than we do for breakfast. These waffles are special though. This waffle recipe comes from one of my favorite celebrity chefs, Anna Olson. For those of you that have been following along with me for a while, you will know that I competed in the Real Women of Philadelphia contest (hence all the recipes involving cream … Continue reading
Gluten-Free Blubarb Cobbler
I bought some AMAZING blueberries the other day at the grocery store. I’m not sure I’ve ever seen such huge blueberries before, but they were fantastic. While eating them by the handful, I asked you guys on Facebook what you would like to see made with blueberries. There were many fantastic suggestions, like muffins, pie, ice cream, pound cake and cheesecake, but I decided to take the suggestion of cobbler, and kick it up a bit. This Blueberry-Rhubarb Cobbler is inspired by my friend Cindy’s Blueberry Rhubarb jam that she posted a few weeks ago. I mean, how could you … Continue reading
Gluten-Free Yeast Pancakes
By now, it should not come as a shock to you that I love pancakes. I’m always trying out new ways to combine flavours, textures, and in this case, methods. These pancakes are not your normal baking powder and baking soda pancakes, these get all their fluffiness from the yeast that is added to the batter. They take a little longer to make, since you have to let the yeast in the batter rise, but it is worth it. they have a fantastic yeast-flavour to them, which really adds to the pancakes. Also…the leftovers make fantastic sandwiches. Bonus! We made … Continue reading
