Cookbook Review ~ Gluten-Free in Five Minutes
I get contacted occasionally to test out new cookbooks. I enjoy this little perk of blogging, because it gives me a chance to see what is out there, and lets me give YOU my honest opinion of a book. You never know. Sometimes I am pleasantly surprised when I get a new cookbook. Enters Roben Ryberg‘s new cookbook “Gluten-Free in Five Minutes“. I will admit to you, I was very hesitant to try this book. I flinched a little when I read the words “Make ‘Em in Your Microwave”. Not much good has ever been baked in the microwave, much … Continue reading

Gluten-Free Mega Mango Muffins
I do still have a few more cream cheese recipes to share with you, but today I bring you a great muffin recipe instead. Enjoy! Will ya take a look at that. Gluten-free muffins that actually look like muffins! Even after being removed from the oven. I know, right? They don’t all do that. Sometimes, they will look amazing in the oven (must be the lighting or something, huh), and you take them out, and the beautiful brown domes on top fall flat. Not with these muffins though! They baked up beautifully, stayed that way, tasted great, and were moist … Continue reading
Gluten Free Raisin Bran Muffins
In my pre-Celiac days, I loved to bake bran muffins. They were just simple, standard healthy bran muffins with raisins. Even though they were so simple, they were not a boring muffin, they could hold their own during brunch or a snack. Topped with a little margarine, and we were set. I also had a nice, simple recipe to go with said muffins, and it never failed me, not once. My husband would take them to work. My daughter gladly took them in her lunch kit to school, and my little man, who seems to think he always needs to … Continue reading
Gluten Free Buttermilk Cornbread Muffins
After making a hearty pot of chili (Pioneer Woman’s recipe, delicious!), I knew I wanted to have cornbread muffins to eat with it. Any previous recipes that I’ve baked had flours that I did not have on hand that day, so I decided to find a recipe, and convert it to gluten-free. And let me tell you, I am so glad that I did! These cornbread muffins were not only the best gluten-free ones I’ve ever had, but they beat anything that I made before going gluten-free as well! Yes, THAT good! They are a bit on the sweet side, … Continue reading
Gluten Free Pumpkin Cheesecake Muffins
Pumpkin & Cream Cheese. They just go together so nicely. There are so many great recipes out there that combine these two flavours. I’ve seen recipes for these muffins all over the internet, and decided to give them a try. I really liked them, the cream cheese baked down into the muffins slightly, making it a nice moist, flavourful muffin. Gluten Free Blueberry Zucchini Bread
Hello, everyone!! I hope you’ve all been having a fantastic summer. I’ve been working very hard on not saying “I’m Sorry” for the lack of posts this summer. I’ve ready many blogs where each post is started with “I’m sorry for not posting more”, and I’m trying really hard to not feel guilty about the number of posts that I’ve posted this summer. I will try to post more regularly in fall, but we’ll see what fall brings, and cross that bridge when we get there. As for us, our summer has been a full, busy, enjoyable summer so far. … Continue reading
Gluten Free Cranberry Orange Loaf
This loaf is good. This loaf is so good, my gluten-eating family devours it, even though it is gluten free. The tartness of the fresh cranberries, the crunch of the pecans, and the fantastic orange flavour that comes through, should definitely send you to the supermarket to get the ingredients. You will not be disappointed! I haven’t tried making these into muffins yet, but I think they’d work well for that too.
Gluten-Free Lemon Poppy Seed Loaf
I don’t know what it is. I am loving anything with lemons lately. The lemons in the stores are looking really nice right now, and the price has dropped a little, so I’ve been buying a few lemons to bake with. I was really hungry for some lemon poppy seed loaf, but had not come across a gluten-free version. I took a recipe that I found at Hey That Tastes Good and altered it a little bit for this recipe. It was delicious! Full of poppy seeds, and lemon flavour, then topped off with a beautiful tart glaze. Perfect! … Continue reading
Gluten-Free Pumpkin Chocolate Chip Muffins
I have never done as much baking with pumpkin as I have this year. We grew our own pumpkins this past summer. Two varieties; the jack-o-lantern pumpkins and the pie pumpkins. We had a lot of fun with the jack-o-lantern pumpkins, and make some pretty amazing Halloween decorations, as well as donated a number of them to my daughter’s school for their fall celebration. The pie pumpkins, however, are proving to be a great addition to the garden as well. It is very easy to bake up the pumpkin, scoop it out, and use it the way you would canned … Continue reading
