I have never done as much baking with pumpkin as I have this year. We grew our own pumpkins this past summer. Two varieties; the jack-o-lantern pumpkins and the pie pumpkins. Gluten Free Zucchini Carrot Muffins
Yes, Gluten-Free people, there is a delicious and nutritious breakfast/coffee break/snack muffin for us! (insert cheering here). These muffins have a wonderful flavour & texture, and contain a number of good things like sunflower seeds, pumpkin seeds, flax seed, raisins, zucchini and carrots. Yes, it’s a long ingredient list today, but it’ll be totally worth it, trust me! This recipe yields 24 muffins, so bake them and freeze them, taking them out when you need them. Gluten-Free Saskatoon Muffins
Here in southern Manitoba, I don’t even know if we can grow actual blueberries. I know we have people that grow Saskatoons though, and to me, the two can be used interchangeably. The Saskatoon berry is smaller than the blueberry, and more purple in colour. We use them the same way you would use blueberries. This sweet, compact little berry was the perfect thing to put in muffins. However, being newly gluten free, I’ve been looking for new muffins.
