Gluten-Free Blubarb Cobbler
I bought some AMAZING blueberries the other day at the grocery store. I’m not sure I’ve ever seen such huge blueberries before, but they were fantastic. While eating them by the handful, I asked you guys on Facebook what you would like to see made with blueberries. There were many fantastic suggestions, like muffins, pie, ice cream, pound cake and cheesecake, but I decided to take the suggestion of cobbler, and kick it up a bit. This Blueberry-Rhubarb Cobbler is inspired by my friend Cindy’s Blueberry Rhubarb jam that she posted a few weeks ago. I mean, how could you … Continue reading
Gluten-Free Yeast Pancakes
By now, it should not come as a shock to you that I love pancakes. I’m always trying out new ways to combine flavours, textures, and in this case, methods. These pancakes are not your normal baking powder and baking soda pancakes, these get all their fluffiness from the yeast that is added to the batter. They take a little longer to make, since you have to let the yeast in the batter rise, but it is worth it. they have a fantastic yeast-flavour to them, which really adds to the pancakes. Also…the leftovers make fantastic sandwiches. Bonus! The pancake … Continue reading

Gluten-Free Mega Mango Muffins
I do still have a few more cream cheese recipes to share with you, but today I bring you a great muffin recipe instead. Enjoy! Will ya take a look at that. Gluten-free muffins that actually look like muffins! Even after being removed from the oven. I know, right? They don’t all do that. Sometimes, they will look amazing in the oven (must be the lighting or something, huh), and you take them out, and the beautiful brown domes on top fall flat. Not with these muffins though! They baked up beautifully, stayed that way, tasted great, and were moist … Continue reading
Gluten Free Lemon Blueberry Doughnut Holes
After reading last week that Kinnikinnick had announced their new spring doughnut flavour, I was excited. New doughnut flavours are always a good thing, right? But, then when I read that they were only going to be available for online ordering, or at their retail location, I realized I would never taste their blueberry doughnuts. I am not in the habit of ordering my gluten free foods online, and I am no where near their retail location. So, I did the next best thing, which I think is better anyway. I came up with my own version of blueberry doughnuts, … Continue reading
Gluten Free Raisin Bran Muffins
In my pre-Celiac days, I loved to bake bran muffins. They were just simple, standard healthy bran muffins with raisins. Even though they were so simple, they were not a boring muffin, they could hold their own during brunch or a snack. Topped with a little margarine, and we were set. I also had a nice, simple recipe to go with said muffins, and it never failed me, not once. My husband would take them to work. My daughter gladly took them in her lunch kit to school, and my little man, who seems to think he always needs to … Continue reading
Gluten Free Cornmeal Cranberry Pancakes
If you’ve been following here for a while already, you’ll know that I love pancakes. If you’re a friend of Facebook, you’ll know that I do make them quite often, changing them up with different add-ins. My kiddos are huge fans of pancakes too. They will take any kind of pancake already, but squeal when they find out I’m making crepes (flat pancakes, in our house). As I’ve said before though, my husband just tolerates pancakes. He’s not really a fan of them, he’ll enjoy them, but they are not his favorite. I think he’d rather have scrambled eggs and … Continue reading
Gluten Free Buttermilk Cornbread Muffins
After making a hearty pot of chili (Pioneer Woman’s recipe, delicious!), I knew I wanted to have cornbread muffins to eat with it. Any previous recipes that I’ve baked had flours that I did not have on hand that day, so I decided to find a recipe, and convert it to gluten-free. And let me tell you, I am so glad that I did! These cornbread muffins were not only the best gluten-free ones I’ve ever had, but they beat anything that I made before going gluten-free as well! Yes, THAT good! They are a bit on the sweet side, … Continue reading

Gluten Free Pumpkin Cheesecake Muffins
Pumpkin & Cream Cheese. They just go together so nicely. There are so many great recipes out there that combine these two flavours. I’ve seen recipes for these muffins all over the internet, and decided to give them a try. I really liked them, the cream cheese baked down into the muffins slightly, making it a nice moist, flavourful muffin.
