If you have been following this blog for a while already, you will know that I LOVE pancakes! We have them quite often on a Saturday morning, or a Sunday brunch/lunch, or even for a quick weeknight supper. I truly do love all things pumpkin, and the other day when my son asked me if we could have crepes, I decided to try my hand at making them pumpkin crepes. I’m not sure how that happened. All things started out normal, then the next thing I know, I’m reaching for my jar of pumpkin puree! However, they were a huge success and everyone’s crepe cravings has been filled. These would be really great with some whipped cream in them, but we kept things simple and just served them with some maple syrup.

By now, it should not come as a shock to you that I love pancakes. I’m always trying out new ways to combine flavours, textures, and in this case, methods. These pancakes are not your normal baking powder and baking soda pancakes, these get all their fluffiness from the yeast that is added to the batter. They take a little longer to make, since you have to let the yeast in the batter rise, but it is worth it. they have a fantastic yeast-flavour to them, which really adds to the pancakes. I love pancakes. I never used to be a big fan of them, but after going gluten-free, I’ve eaten many a pancake. They are especially a highlight when we go camping. I would throw a handful of chocolate chips in the batter before frying them up, and tell the kids that we had chocolate ants in our pancakes. They loved it. Delicious Gluten-Free Pancakes with Blueberry Sauce

There really is no better way for a celiac to start the LONG WEEKEND (yes, we’re having a long weekend here in Canada this weekend), than with a nice stack of celiac-friendly pancakes. The only thing that would make that better is if those pancakes are topped with a delicious homemade blueberry sauce. I made these pancakes when we went camping the last time.
