It’s Mardi Gras ~ Time for Gluten-Free King Cake
When you mention the words “Mardi Gras” most people instantly think of New Orleans. Although I have never traveled to New Orleans, it is a place that I think many people, myself included, have dreamed of visiting. Although the thought of the overcrowding on Bourbon Street, at night, during Mardi Gras is enough to put me in a cold sweat, being able to visit the culturally rich area is something I would still love to do one day. There are many culturally rich foods associated with Mardi Gras, and one of those is the King Cake. Having lived in southern … Continue reading
Gluten Free Chocolate Raspberry Cupcakes
Believe it or not, next week is already the middle of February. Not only does that mean we are half way to March, but it also means that it is Valentine’s Day. We don’t do much here to celebrate Valentine’s, whatever we do, is to create memories for the kids. We have the red and pink heart shaped vinyl window stickers, a few shiny hearts hanging around, and we usually try for some sort of “Valentines-y” supper on the 14th, complete with a decorated table. Sometimes it’s a fancy supper with a “fancy-to us” meal, which my husband enjoys, or … Continue reading
Crusting Buttercream
Birthdays are done and finished for this year, so now we can fully concentrate on Christmas!! Mind you, I’ve been busy crafting and decorating for Christmas for the past few weeks already, that is what has been keeping me busy. But, the end is in sight now, and then I will switch over to Christmas baking! On a side note, if you want to follow along with our family’s “Elf on a Shelf” antics, please pop by The Baking Beauties Facebook page, where new pictures are posted daily. I love keeping in touch with you guys via Facebook, so please … Continue reading
Gluten Free Caramel Apple Trifle
When my Mom or I are asked to bring dessert to a gathering of friends or family, we enjoy bringing a trifle. Usually I stick to a Fresh Fruit Trifle, using a variety of in season fruit, or a sinfully-delicious Chocolate-Chocolate Trifle. However, after seeing a version of this Caramel Apple Trifle on Pinterest, I decided to put my own spin on it and make this perfectly Autumn trifle instead. So delicious! Like, still-tasty-after-3-days delicious. This recipe makes a lot, I would say it would be enough to serve approximately 30 people. But, it is so easy to put together, … Continue reading
All-in-One Holiday Bundt Cake
Autumn is just such a beautiful time of year. The air is cooler & crisp. The trees turn beautiful colours that you can only enjoy for a few weeks (or until a wind storm comes along and blows them all off the trees). I also love all the flavours that are in season this time of year. The abundance of apples, cranberries, pumpkin and pecans. Each and every one of those things whispers “Autumn!”, but this cake screams it! This cake is created from a recipe from Dorie Greenspan’s “Baking From my Home to Yours” cookbook. I was flipping through … Continue reading
Gluten Free Rootbeer Float Cupcakes
After a week of holidays, we’re back to business today! First order of business, announcing the winner of Roben Ryberg’s new cookbook, Gluten Free in Five Minutes. Thanks to everyone that entered, and congratulations to Jordan on winning the cookbook! I hope you will all use the hamburger roll recipe that I posted, and create those amazing sandwiches & burgers that you listed in the comments, they sounded DELICIOUS! For those wanting to try another recipe from the book, hop over to Roben’s site and try the Extreme Chocolate Cake, it looks really, really good! For those that weren’t lucky … Continue reading
Gluten-free Lemon Meringue Cupcakes
Happy National Lemon Meringue Pie Day! Yes, this is yet another food-holiday inspired recipe. Except, instead of making a pie, I decided to turn the tangy flavour into a cupcake. I think I succeeded quite well. These cupcakes start with a moist lemon-flavoured cupcake, they are filled with a (quick and easy) lemon curd, and topped with a meringue-based frosting. Unlike most gluten-free baking, I have found that cupcakes actually seem BEST on the second day. So, either make these cupcakes early in the day, or make them the evening before, and keep them in the fridge until ready to … Continue reading
Gluten-Free S’mores Cupcakes with Toasted Marshmallow Frosting
Ah, isn’t summer grand? With all the fun activities that one can do in these few months, I know that making s’mores over a campfire is on my people’s lists. This cupcake takes it’s flavours from the campfire s’mores and brings it to new heights. This cupcake is fancy enough to serve to guests, and yet fun enough for the kids. The bottom has a graham layer cookie crust, topped with chocolate, then the wonderful, moist chocolate cupcake, topped with more chocolate and graham wafer crumbs. THEN, the whole thing is topped off with a toasted marshmallow frosting. Delish!
Gluten-Free Blubarb Cobbler
I bought some AMAZING blueberries the other day at the grocery store. I’m not sure I’ve ever seen such huge blueberries before, but they were fantastic. While eating them by the handful, I asked you guys on Facebook what you would like to see made with blueberries. There were many fantastic suggestions, like muffins, pie, ice cream, pound cake and cheesecake, but I decided to take the suggestion of cobbler, and kick it up a bit. This Blueberry-Rhubarb Cobbler is inspired by my friend Cindy’s Blueberry Rhubarb jam that she posted a few weeks ago. I mean, how could you … Continue reading
Gluten-Free Cake Pops!
First off, I have been meaning to make cake pops ever since Bakerella was on Martha Stewart with them. Seriously, it’s been that long! Actually, it was those mini cupcake looking cake pops that first got me interested in them. I have the cutter, I’ve had it for a few years, but I just haven’t taken the time to make them yet. They seem a little…well, time consuming. Not sure if I have the patience for it. But, I did finally get around to making some cake pops. And yes, these are gluten-free. Aren’t they cute? I made them for … Continue reading
