Gluten-free Lemon Meringue Cupcakes

lemonmeringuecupcakes

Happy National Lemon Meringue Pie Day! Yes, this is yet another food-holiday inspired recipe. Except, instead of making a pie, I decided to turn the tangy flavour into a cupcake. I think I succeeded quite well. These cupcakes start with a moist lemon-flavoured cupcake, they are filled with a (quick and easy) lemon curd, and topped with a meringue-based frosting. Unlike most gluten-free baking, I have found that cupcakes actually seem BEST on the second day. So, either make these cupcakes early in the day, or make them the evening before, and keep them in the fridge until ready to … Continue reading

Gluten-Free S’mores Cupcakes with Toasted Marshmallow Frosting

smorescupcakes

Ah, isn’t summer grand? With all the fun activities that one can do in these few months, I know that making s’mores over a campfire is on my people’s lists. This cupcake takes it’s flavours from the campfire s’mores and brings it to new heights. This cupcake is fancy enough to serve to guests, and yet fun enough for the kids. The bottom has a graham layer cookie crust, topped with chocolate, then the wonderful, moist chocolate cupcake, topped with more chocolate and graham wafer crumbs. THEN, the whole thing is topped off with a toasted marshmallow frosting. Delish!   … Continue reading

Gluten-Free Blubarb Cobbler

bluebarbcobbler

I bought some AMAZING blueberries the other day at the grocery store. I’m not sure I’ve ever seen such huge blueberries before, but they were fantastic. While eating them by the handful, I asked you guys on Facebook what you would like to see made with blueberries. There were many fantastic suggestions, like muffins, pie, ice cream, pound cake and cheesecake, but I decided to take the suggestion of cobbler, and kick it up a bit. This Blueberry-Rhubarb Cobbler is inspired by my friend Cindy’s Blueberry Rhubarb jam that she posted a few weeks ago. I mean, how could you … Continue reading

Gluten-Free Cake Pops!

cakepop2

First off, I have been meaning to make cake pops ever since Bakerella was on Martha Stewart with them. Seriously, it’s been that long! Actually, it was those mini cupcake looking cake pops that first got me interested in them. I have the cutter, I’ve had it for a few years, but I just haven’t taken the time to make them yet. They seem a little…well, time consuming. Not sure if I have the patience for it. But, I did finally get around to making some cake pops. And yes, these are gluten-free. Aren’t they cute? I made them for … Continue reading

Gluten-Free Cookie Surprise Cupcakes from Elana’s Pantry

Elanascookiesurprisecupcakes

A while back, before cream cheese took over my life, Kara from Ten Speed Press contacted me, wondering if I would like to review Elana Amsterdam’s newest cookbook, Gluten-Free Cupcakes. Absolutely!! I love cupcakes. And I need gluten-free. It was a perfect fit. First off, I do not do a lot of baking with coconut flour, or almond flour, both of which are the required flours for this book. So, after a trip to the store, I was ready to start. I had a hard time deciding which cupcakes to make to review for you guys, since Elana’s cookbook is … Continue reading

Gluten-Free Apple Crisp Pizza

applecrisppizza

This recipe…wow. I thought that if none of the other recipes would get me a finalist spot in the Real Women of Philadelphia contest, that this recipe would secure me a spot. Even though no finalist spot was to be had by me, it is a FANTASTIC recipe! What a great combination of flavours and textures. It is like having a cookie pizza, apple dip, and apple crisp all in one dish. Now, I admit, if I were to rework this recipe, I would do things differently, to get a crisper cookie. So, if you are feeling adventurous… I would … Continue reading

Gluten-Free Summer Berry No-Bake Cheese Cupcake

summerberrynobakecheesecupcake

These little no-bake cupcakes are so adorable, and so quick and easy to put together. They are the perfect size to have a sweet bite after supper, or with your afternoon coffee. These are so cute and so realistic looking, my son tried to take the pink wrapper off before eating, not knowing that the pink wrapper is chocolate and edible. Creamy Carrot Pudding Cake (Gluten-Free)

creamycarrotcakepudding

We LOVE carrot cake at our house. My husband has always liked carrot cake, and we even had carrot cake at our wedding. The combination of a moist, spicy carrot cake mixed with the sweet cream cheese frosting is amazing. There is no way I could do a whole contest using cream cheese and NOT do a version of carrot cake. This carrot cake pudding fit the bill perfectly. We really, really liked it. the beautiful caramel sauce that baked in the bottom, and the layer of cream cheese on top…YUM!  One can not help but to think of cream … Continue reading

Gluten Free Cream Cheese Black Forest Brownies

CheesecakeBlackForestBrownies

Oh, so yummy!! This dessert was another of my entries for the Real Women of Philadelphia contest I entered lately, and it was ready to eat in 1 hour. The dense brownie, topped with a sweet cream cheese layer, and then these beautiful big Bing cherries that were cooked into a pie filling…oh my goodness! Those Bing cherries were worth it all by themselves! The cake portion can easily be doubled and baked in a 9″x13″ pan, and the single recipe of the cherry pie filling will be enough for the 9×13-inch pan. Depending on how much cherry pie filling … Continue reading
