Happy National Lemon Meringue Pie Day! Yes, this is yet another food-holiday inspired recipe. Except, instead of making a pie, I decided to turn the tangy flavour into a cupcake. I think I succeeded quite well. These cupcakes start with a moist lemon-flavoured cupcake, they are filled with a (quick and easy) lemon curd, and topped with a meringue-based frosting. Ah, isn’t summer grand? With all the fun activities that one can do in these few months, I know that making s’mores over a campfire is on my people’s lists. This cupcake takes it’s flavours from the campfire s’mores and brings it to new heights. This cupcake is fancy enough to serve to guests, and yet fun enough for the kids. I bought some AMAZING blueberries the other day at the grocery store. I’m not sure I’ve ever seen such huge blueberries before, but they were fantastic. Creamy Carrot Pudding Cake (Gluten-Free)
We LOVE carrot cake at our house. My husband has always liked carrot cake, and we even had carrot cake at our wedding. The combination of a moist, spicy carrot cake mixed with the sweet cream cheese frosting is amazing. There is no way I could do a whole contest using cream cheese and NOT do a version of carrot cake.
