Gluten-Free Peanut Butter and Chocolate Truffle Cup-Cookies
Alright…for those of you that are dairy free or dessert-haters…hang on. Adding cream cheese to EVERYTHING is not going to continue here forever. As I’ve said on Facebook, I made 15 desserts for the last week of the Real Women of Philadelphia Contest, and right now, I’m simply transferring those recipes that I developed over to my blog. So, if cream cheese or desserts isn’t your thing…stay tuned, I’ve got more stuff coming after this, including mango muffins, yeasted pancakes, funky chicken pizza, to name a few. These little cup-cookies though…YUM! These are mini sized peanut butter cookies, with the … Continue reading →
Creamy Cookie Pizza (Gluten-Free)
Another of my dessert entries for the Real Women of Philadelphia contest. I ‘think’ this may have been the family favorite that week. We all LOVED this pizza cookie, the flavour was AMAZING! This is the one thing that I know I could have made right away again, and my family would have gobbled it up in a matter of days. So yummy, and so pretty with all the coloured candy, and drizzled chocolates and caramel. *sigh* I wish I had a piece right now! Whatever toppings you plan on using, be sure they are gluten-free! Oh. My. Goodness. This … Continue reading →
Chocolate Cranberry Date Bars
I have a confession to make. Are you ready for this? OK…here we go. My name is Jeanine. I am 34 years old, and I had never eaten a date. Until recently. They are not an attractive dried fruit. I mean, not many dried fruits are as gorgeous as they are before being dehydrated. But dates, well, they look like dried out beetles to me. Yeah, try convincing yourself to eat that. Good thing is, because of this blog, I push myself to try new foods I normally wouldn’t try, and dates were one of the latest things that I … Continue reading →
The Ultimate Gluten Free Cranberry Squares
Alright, I admit. These squares, they aren’t the pretties. They won’t be winning any beauty pageants on the dessert table. But, if that’s the case, count yourself lucky, because they are DELICIOUS (more for you!)! I was shocked. I had baked this pan of cranberry squares, hoping for something new to blog about (and using up the LARGE bag of dried cranberries that I got at a good price), and before they even went into the oven, I had my doubts. When they came out of the oven, I thought they’d make a great dessert, if I could convince the … Continue reading →
Gluten Free Peanut Butter Caramel Thumbprint Cookies
I know I just posted a peanut butter cookie, and I do have a few other recipes I want to share with you, but after making these peanut butter caramel thumbprint cookies yesterday, I just had to share. This recipe converted to gluten-free quite easily, and I was quite surprised at how well everything went together. And to have such a pretty (and fancy) looking peanut butter cookie made within a relatively short amount of time, I thought it was worth sharing. These are simply a peanut butter cookie, that, after baking, has an indent formed in the middle. The … Continue reading →
Gluten-Free Peanut Butter Oatmeal Drops
I love peanut butter. I love cookies. And I love quick, simple recipes. This recipe, is all 3 things, rolled up into one tasty little no-bake cookie. I’ve made a No-Bake Cookie in the past that were chocolate, but when I saw this one, it caught my eye. It had peanut butter, but no chocolate in it. I think it would be great with some chopped salted peanuts added to it as well (next time). These cookies, although they contain peanut butter, actually have a caramel flavour to them, at least that’s what we all tasted. Give them a try, … Continue reading →
Gluten Free Lemon Bars (the Way Lemon Bars Should Be)
In my mind, I always had this vision of what lemon bars should be like. They should have a light crust, and be topped with a lot of lemon filling, then topped with a sprinkling of powdered sugar. I tried making lemon bars a few times, and was always disappointed with them, because they had this thin, thin layer of lemon. I know some of you may like them that way, but I wanted my lemon bars to be loaded with lemon. After searching around the world wide web a bit, I came across Ina Garten’s recipe for Lemon Bars. … Continue reading →
3 Year Blogiversary, Some History, and Cookies!
Good Monday Morning! The sun is shining…and well, it’s sunny. I’m trying to be positive here, OK? It’s Monday again, freezing outside, and my little boy has been sick and just not himself since last Thursday. When your child is sick, it feels like it has been FOREVER since things were “normal”. And I know that we have been extremely fortunate with our children, they are rarely sick, and overall, have very, very good health. It sure makes you appreciate when they are doing well, fighting with each other, and running around the house, I can tell you that. Hopefully … Continue reading →
Gluten-Free Baked Apple Oatmeal
Mmm…apples, cinnamon and oatmeal. The perfect combination for a great, hearty and healthy breakfast. I like making sure my kids have a good breakfast before heading out the door, and oatmeal definitely fits that bill. They both really like the baked oatmeal, and I love that I can bake it the day before, and just re-heat their pieces, topped with milk, in the microwave the next morning. Truly faster than those little packets of instant oatmeal, and WAY better for you too. My kids liked theirs topped with a squiggle of caramel sauce. YUM! Side Note: Now, I know, not … Continue reading →
Gluten Free Farmers Brownies
Happy Valentine’s Day, everyone! I hope you all have a fantastic day of love & friendship, and count all those that you have as blessings. And if you’re still looking for something for dessert for your special someone, how about some wonderful, moist chocolate brownies? These brownies are not fudgy, they are more cake-like. But so delicious topped with a chocolate frosting. We actually had Farmers Brownies at our wedding, and before going gluten-free, they were our favorite brownies. I’m glad that I finally decided to convert them to gluten-free, they were so worth it! I even included quinoa flour, … Continue reading →
