Gluten Free Plum Clafouti
Plum Clafouti is something I’ve never heard of before, or even ever tried. But, I when I bought some prune plums and wasn’t sure what to do with them, a quick internet search lead me to this dessert. I wasn’t sure if it was the way it was “supposed” to be, but the kids and my husband all enjoyed it so much, and went back for seconds, and had to be cut off from thirds, that I thought I’d share it with you. I hope you enjoy it too!
Gluten Free Blueberry Cream Cheese Tart
This is a great recipe. The flavour of the nut crust, the cream cheese layer, and the homemade blueberry sauce is AMAZING! I do think I would do 1 1/2 times the crust though, for the pan that I used, so that it would be a little thicker. I also think I would up the cornstarch by 1 or 2 Tbsp so that it would set up faster (we only had 1 hour to complete the recipes for the Real Women of Philadelphia contest). Creamy Lime and Coconut Tarts (gluten-free, of course)
This is yet another entry from my attempts at becoming a finalist in the Real Women of Philadelphia contest. I absolutely LOVED dessert week. I could have made 2-3 desserts per day. There are just 2 problems with that though…that would require a lot of cream cheese, and break my grocery-shopping bank, and I’d have to find out-of-house help to eat the results. Gluten Free Butter Tarts and "Pie Crust for Anything"
I admit it. I never had a butter tart until AFTER I was diagnosed with Celiacs. My Mom made these during the holiday season nearly every year. I’m not sure what I thought was in them, but when I was younger, I refused to eat them, and it just stayed that way. Crustless Pumpkin Pie
I’ve never been a fan of pie. Well, it ends up, I’ve never been a fan of pie crust. This crustless pumpkin pie is gluten free, and will be loved by both “gluten-eaters” and those of us that eat gluten free. This pie was very flavourful, simple to make, moist, and yet held it’s shape well enough, you’d think there was a crust under there.
GF Pumpkin Pecan Tarts
I made these mini pies using a new GF crust recipe. I was very happy with this crust recipe, it was tender, and even slightly flaky. However, I only had to roll the dough into small balls & place in a mini muffin tin (to make mini tarts). I never had to roll out a whole pie, I’m not sure how it would behave then. I think if rolled between two sheets of wax paper, it wouldn’t be a problem. These little bite size tarts were perfect for dessert! Fresh Crustless Strawberry Pie
Being diagnosed with celiac disease not that long ago, I’ve been on the look out for recipes that are naturally gluten free. Not something that I have to convert over to gluten-free, or figure out which additives will be necessary to make this dough behave the way regular, gluten-filled doughs would. I’ve found some great desserts like the Mocha Mousse Torte, the Over the Top Peanut Butter Brownies, and the Merry Meringues.
