Southwest Chicken Mango Quinoa

southwestchickenmangoquinoa

I love quinoa. Ask me 2 years ago, and I’d never heard of it. Weird how 2 years ago, one hadn’t ever heard of an ancient grain before, but so it goes! I love how quick it cooks up (perfect for those “What’s for supper today” days). I love the nutty flavour it has behind it. That you can eat it hot or cold, and it’s great either way. And I love that you can do anything with it. Flavour it anyway you want. You want it to be filled with Greek flavours? Done! How about a nice creamy dessert … Continue reading

Cheesy Chicken and Spinach Rolls

CheesyChickenandSpinachRolls

Here is another recipes from the Real Women of Philadelphia contest I entered. All entries are accepted, and now we just wait to hear the final four finalists, 2 in entree week (announced today), and 2 more for dessert week (announced next Wednesday). Fingers crossed big time, I entered 15 new gluten-free dessert recipes last week. Yes, 15 newly developed recipes in 1 week, that is why the blog was quiet last week, I was busy developing, filming, editing, and entering my recipes. Now, I’m playing catch up and getting all these great recipes onto the blog. This is my … Continue reading

Grilled Greek Chicken

greekchicken

I’m always looking for new ways to serve up our supper, and I know I will be making this chicken again. This chicken is flavoured in a Greek-inspired marinade. If you can allow the chicken to marinade for a few hours, or overnight, you will have some fantastic flavoured chicken. This is perfect for the upcoming barbecue season. This chicken grills up in minutes, and is fantastic served along-side the Greek Quinoa Salad, which can be made in advance.

Gluten Free Chicken Stir Fry

chickenstirfry

Back in the pre-GF days, my husband & I enjoyed having stir fry for supper. It became a thing of the past with the Celiac diagnosis, because I only knew how to make stiry-fry using the little packages of seasoning mixes that you find in the grocery store. You know the ones…just add water and wa-la, your sauce is prepared.  And now, over 2 1/2 years later, we’re finally enjoying chicken stir fry on top of brown rice again. The kids, not so much, they hate rice. I don’t know why, but hey, there could be worse things (like the … Continue reading

The Best Gluten-Free Chicken Fingers (Baked, not Fried!)

chickenfingers

These chicken fingers were SO good! I hadn’t had great chicken fingers since going gluten-free, but now that has changed. These were great! And so nice too, because you know what kind of meat it is. It is so nice to know what you’re eating.

Moroccan Chicken and Lentils

moroccanchickenandlentils

We’ve always been a “meat and potatoes” kind of family. But, with there being so many great things available (rice dishes, quinoa, beans, lentils, etc), we’ve decided to expand our palates a little. I’ve been wanting to try lentils for a while now, and although this wasn’t the kids favorite dish, we did all enjoy it. The combination of seasonings was really enjoyable, and it was a nice change.

Yummy Honey Chicken Kabobs

honeychickenkabobs

Today I’m going to be working on the Gluten-Free Holiday Baking e-book, but before I get to that, I wanted to throw out another grilling recipe for you (gotta quickly do that before the snow flies!). These kabobs were GOOD! And so simple to do too. We like to make a batch of rice pilaf , put it all on a large platter, and top it with the grilled kabobs and veggies. All in one big platter, kind of like ordering family style in a restaurant. I would have liked to add some pineapple chunks to the skewers, but my … Continue reading

Gluten Free Penne with Chicken and Pesto

pennewithchickenandpesto

This pasta dish was fantastic! I was on the hunt for something for supper, with things I had on hand. It was already 4:00 in the afternoon. You know how it is, I’m sure you’ve all been there. I came across a recipe that had penne noodles (I had), pesto (also had), and chicken (yeah, I had that too!). After looking over the recipe, however, I noticed that it was supposed to have 1 1/4 cups of heavy cream. No, no, no. I didn’t have it, and I didn’t feel like making a dish in summer that has that much … Continue reading

Sweet & Sticky Barbecue Chicken Wings

stickysweetgarlicchickenwings

With the “big game” coming up (at least, that’s what I keep hearing/reading about, I don’t watch), you may want to take the time make up a batch of these chicken wings. Or, if you’re like me, you may want to make these little, fall-off-the-bone drumlettes just to enjoy them. No game needed. You could use chicken wings for this recipe, but I used a pack of drumlettes that I skinned, reducing some of the fat. The recipe was intended for the slow cooker, but apparently I was too slow that day (do you know how long it takes to … Continue reading

Chicken with 20 Cloves of Garlic

chickenwith20clovesofgarlic

I have been wanting to try this recipe (or one similar) for a while already. Since I just bought 3 new bulbs of garlic yesterday, and some chicken breasts (bone in was on sale, so that’s what I used), I figured it was the perfect time to give this recipe a try. Not to mention, it’s a super quick & simple recipe, and your house smells FANTASTIC while cooking it (and will be vampire free too). The chicken had a great flavour, and the garlic was sweet & roasted, just perfect! I did let the sauce cook down a bit … Continue reading
