Grilled Greek Chicken
I’m always looking for new ways to serve up our supper, and I know I will be making this chicken again. This chicken is flavoured in a Greek-inspired marinade. If you can allow the chicken to marinade for a few hours, or overnight, you will have some fantastic flavoured chicken. This is perfect for the upcoming barbecue season. This chicken grills up in minutes, and is fantastic served along-side the Greek Quinoa Salad, which can be made in advance.
Gluten Free Chicken Stir Fry
Back in the pre-GF days, my husband & I enjoyed having stir fry for supper. It became a thing of the past with the Celiac diagnosis, because I only knew how to make stiry-fry using the little packages of seasoning mixes that you find in the grocery store. The Best Gluten-Free Chicken Fingers (Baked, not Fried!)
These chicken fingers were SO good! I hadn’t had great chicken fingers since going gluten-free, but now that has changed. These were great! And so nice too, because you know what kind of meat it is. It is so nice to know what you’re eating.
Moroccan Chicken and Lentils
We’ve always been a “meat and potatoes” kind of family. But, with there being so many great things available (rice dishes, quinoa, beans, lentils, etc), we’ve decided to expand our palates a little. I’ve been wanting to try lentils for a while now, and although this wasn’t the kids favorite dish, we did all enjoy it. The combination of seasonings was really enjoyable, and it was a nice change.
Gluten Free Penne with Chicken and Pesto

Sweet & Sticky Barbecue Chicken Wings
With the “big game” coming up (at least, that’s what I keep hearing/reading about, I don’t watch), you may want to take the time make up a batch of these chicken wings. Or, if you’re like me, you may want to make these little, fall-off-the-bone drumlettes just to enjoy them. No game needed. Chicken with 20 Cloves of Garlic
I have been wanting to try this recipe (or one similar) for a while already. Since I just bought 3 new bulbs of garlic yesterday, and some chicken breasts (bone in was on sale, so that’s what I used), I figured it was the perfect time to give this recipe a try.
