Easy and Delicious Ranch-Parmesan Chicken
This chicken was so delicious & simple to put together, even good enough to make when company comes over. By using gluten-free bread crumbs, this is a dish that Celiacs can enjoy as well. Top this with some spaghetti sauce & a slice of mozza during the last few minutes of baking, and you’ll have a wonderful, flavourful Chicken Parmesan. Gluten-free Chinese-Style Chicken Balls with Sweet and Sour Sauce
Ahh…this meal really hit the spot. We talked about it for days after. We were absolutely amazed & delighted with how well this dish turned out. Since going gluten-free last May, we haven’t done any Chinese take-out. We loved ordering the sweet & sour chicken balls; that was something everyone in the family enjoyed. Mojito Chicken
This chicken was a lot of fun to make. It used methods I hadn’t done before, but were simple to do. It had a rub, a marinade, and then a glaze, so it had great flavour! I know it has a few steps, but it really does not take long to make at all, don’t let that intimidate you. ShareTweet016bb2bbfdb70a74bd4ffe5abc071104Share via email
Mexican Chicken Corn Chowder
This soup is so easy to make, but has such a great flavour. We all really liked this soup, right down to the 3 year old. My husband even asked that this recipe be put into regular rotation. It’s a nice change from the Veggie Chowder that I usually make. ShareTweet6f7a7589dd50983c76a486e42da594b7Share via email
Salsa Chicken
I love making chicken dishes for supper. The only thing better, is a chicken dish that takes very little time. This flavourful salsa chicken takes only a few minutes to prep before you put it in the oven and get the rest of your supper going. It tastes great, and was very moist as well. Definitely a recipe to keep in mind when you don’t have enough time to marinade, bread or fry your chicken. Sprinkle it with the seasoning, top it with salsa, and bake it. When it is finished baking, you top it with cheese and put it … Continue reading

I loved it because it was really quick and easy to prepare, but tasted otherwise. Those are always great dishes, perfect to make when you have last minute company for supper … Continue reading
Blueberry Chicken Salad
I’ve said it before, and I’ll say it again. Salads that can be thrown together, using whatever you have in the fridge or garden at the time, are the PERFECT summertime meal! this salad will make a great lunch or light supper. The combination of chicken with the celery, pepper, blueberries and lemon yogurt were really, really good. I think this recipe could be tweaked a bit more, creating new versions. I really enjoyed the use of blueberries in this dish though. Delicious! ShareTweetf2b19a039ab85a7f531c8e4f08bb2bb9Share via email
