Grilled Tilapia with a Mango Salsa
I was so impressed with this recipe, I just had to share. It is a recipe that I got from AllRecipes.com, I don’t think I even changed it up at all. And that is very uncommon for me, I usually have to change a recipe. This one, however, looked perfect to me on paper, and on my plate as well. We really, really enjoyed it. Topping your fish was salsa is a fantastic way to get a healthy protein, plus more fruits/veggies into your diet. If hope you’ll give this quick dinner a try sometime, I don’t think you’ll be … Continue reading
Grilled Greek Chicken
I’m always looking for new ways to serve up our supper, and I know I will be making this chicken again. This chicken is flavoured in a Greek-inspired marinade. If you can allow the chicken to marinade for a few hours, or overnight, you will have some fantastic flavoured chicken. This is perfect for the upcoming barbecue season. This chicken grills up in minutes, and is fantastic served along-side the Greek Quinoa Salad, which can be made in advance. ShareTweet8f45cd817c693f3b8dc30ab50fb98dedShare via email
Quick and Easy Salmon with Dill
When trying to answer the dreaded “What’s for supper” question, I usually run down a mental check list. It goes something like this: What do I have in the house? Do I have the time to make it? Will the kids eat it? Does it have any nutritional value? When it comes to frozen salmon fillets, as long as #1 is answered yes, it can easily be on our table in less than 1/2 hour and everyone will be happy. My kids actually both loves salmon, and they like it when it make it simple. No maple sauce (although that … Continue reading
Gluten Free Falafels
Something you may not know about me (or maybe just forgot, haha). I have the WORST memory. I can’t remember movies we’ve seen, places we’ve been, people we’ve met, or places we’ve been. It’s rough. I really feel sorry for my husband. He’ll try to talk about something from our dating days, and I can’t remember it. Seriously, unless it involves something bad (weird how that happens, huh?), my memory just can not hold all that information. If there is no photographic evidence, it pretty much didn’t happen in my mind. I do remember when he lived on his own … Continue reading
Broiled Tilapia Parmesan
We are trying to eat a little healthier lately, and trying to change things up a bit more. The kids both like fish, but I’m always trying to find different ways to prepare it. This recipe actually got “Yum”s from everyone. From the oldest to the youngest, we were all surprised at how good this tasted. I will definitely be making this recipe again, it was so simple, quick & delicious, all 3 are important in my books. ShareTweetaaa8304d167a5fa420ed583b19ff80feShare via email
Gluten Free Chicken Stir Fry
Back in the pre-GF days, my husband & I enjoyed having stir fry for supper. It became a thing of the past with the Celiac diagnosis, because I only knew how to make stiry-fry using the little packages of seasoning mixes that you find in the grocery store. You know the ones…just add water and wa-la, your sauce is prepared. And now, over 2 1/2 years later, we’re finally enjoying chicken stir fry on top of brown rice again. The kids, not so much, they hate rice. I don’t know why, but hey, there could be worse things (like the … Continue reading
The Best Gluten-Free Chicken Fingers (Baked, not Fried!)
These chicken fingers were SO good! I hadn’t had great chicken fingers since going gluten-free, but now that has changed. These were great! And so nice too, because you know what kind of meat it is. It is so nice to know what you’re eating. ShareTweet6bc2deca5085d96a69303a3dd385251bShare via email
Moroccan Chicken and Lentils
We’ve always been a “meat and potatoes” kind of family. But, with there being so many great things available (rice dishes, quinoa, beans, lentils, etc), we’ve decided to expand our palates a little. I’ve been wanting to try lentils for a while now, and although this wasn’t the kids favorite dish, we did all enjoy it. The combination of seasonings was really enjoyable, and it was a nice change.
