Easy to Make: Pumpkin Puree

pumpkinpuree

Today I am going to show you how to make something that you will NEED this Fall. If you are wanting to do any baking with pumpkin (and use that Pumpkin Pie Spice you made earlier), you will need some pumpkin puree. Now, I know you can buy this in a can, but really, when you make it from a real pumpkin, it just tastes that much better. Now, I don’t have the ideal pumpkin here, but it works just fine. Ideally, you will want the nice little “Pie Pumpkins” or “Sugar Pumpkins”, which are nice little round pumpkins, perfect … Continue reading

Southwest Chicken Mango Quinoa

southwestchickenmangoquinoa

I love quinoa. Ask me 2 years ago, and I’d never heard of it. Weird how 2 years ago, one hadn’t ever heard of an ancient grain before, but so it goes! I love how quick it cooks up (perfect for those “What’s for supper today” days). I love the nutty flavour it has behind it. That you can eat it hot or cold, and it’s great either way. And I love that you can do anything with it. Flavour it anyway you want. You want it to be filled with Greek flavours? Done! How about a nice creamy dessert … Continue reading

Colorful Grilled Corn Salad

grilledcornsalad

Welcome to August! Wow, where on earth is the summer going? We’ve been having a fantastic summer so far, I just can’t believe how quickly it is flying by. We will need to do some back-to-school shopping soon, I guess. I love buying the new markers, pencils and supplies for the kids, but this year, I’m just not ready to think about sending them back yet. July went by so quickly though, that if I blink twice, August may be past too. We have actually been having a beautiful, hot summer this year. Some years, we have a very cool … Continue reading

Creamy Quinoa Apple Crunch

CreamyQuinoaAppleCrunch

Alright, everyone. The Philly judges have spoken, and this Baking Beauty is not going to the finals in Toronto. I do feel that they made an error, because I not only make AMAZING food using the cream cheese, but I also do it gluten-free. Which, in my books, is rockin’ it! But, so it goes. One door has been closed, now I need to figure out which window is open. Thank you guys all so much for the encouragement along the way, and the emails and comments on Facebook, I really appreciate it. I’ve still got more dessert recipes to … Continue reading

Cheesy Chicken and Spinach Rolls

CheesyChickenandSpinachRolls

Here is another recipes from the Real Women of Philadelphia contest I entered. All entries are accepted, and now we just wait to hear the final four finalists, 2 in entree week (announced today), and 2 more for dessert week (announced next Wednesday). Fingers crossed big time, I entered 15 new gluten-free dessert recipes last week. Yes, 15 newly developed recipes in 1 week, that is why the blog was quiet last week, I was busy developing, filming, editing, and entering my recipes. Now, I’m playing catch up and getting all these great recipes onto the blog. This is my … Continue reading

quinoastuffedtomatoes

Well, the weeks continue to fly by, and this week we’re submitting entree recipes. Looks like by Sunday night, there will be a LOT of entries. You can view all the entries HERE. Some amazing dishes submitted already. Right now, I’m going to share the recipes that I submitted for the side dish week though. These are both so quick, and so delicious, I’m sure you’ll love them. Creamy Dill, Tomato and Cucumber Salad I don’t know why, but I forgot to take a picture of this salad after I made it. Sorry about that. But, I have a video, … Continue reading

Creamy Asapargus Soup

asparagussoup

I know this soup may not look like much, but it is so delicious. The adults loved it, the kids loved it, what more do you need to make a great soup? This soup did have the asparagus tips in there, but you know what? They sink. So, although they were there, they just didn’t want to be photographed. With spring being the time for asparagus, I hope you will give this soup a try, I think you’ll really enjoy it.

Waldorf Inspired Quinoa Salad

quinoawaldorfsalad

This salad isn’t a Waldorf salad in the traditional sense, but it takes a lot of the same great flavours of a Waldorf salad, and combines it with the power-house seed, quinoa. I made this for supper one day while we were having BBQ beef ring and potato salad, it was like summer. So great to get some of those lighter, make-ahead-salad meals in, now that the weather is finally warming up. This salad was fantastic the up until the 3rd day, and then it was gone. But, the apples did not brown, the yogurt dressing did not get runny, … Continue reading

Gluten Free Falafels

falafel

Something you may not know about me (or maybe just forgot, haha). I have the WORST memory. I can’t remember movies we’ve seen, places we’ve been, people we’ve met, or places we’ve been. It’s rough. I really feel sorry for my husband. He’ll try to talk about something from our dating days, and I can’t remember it. Seriously, unless it involves something bad (weird how that happens, huh?), my memory just can not hold all that information. If there is no photographic evidence, it pretty much didn’t happen in my mind. I do remember when he lived on his own … Continue reading
