Gluten Free Falafels
Something you may not know about me (or maybe just forgot, haha). I have the WORST memory. I can’t remember movies we’ve seen, places we’ve been, people we’ve met, or places we’ve been. It’s rough. Refried Beans
I love foods with a Mexican flare. I like the cheeses, the spices, it’s all good. And like most things, homemade refried beans taste better than those that you can get in a can. Those in a can, they do when you need to add them to a casserole, or something like that. but, I wouldn’t want to eat them alone, with chips. THESE beans, however, topped with a little cheese (melted, maybe?), and you’re ready to dig in with your tortilla chips. Moroccan Chicken and Lentils
We’ve always been a “meat and potatoes” kind of family. But, with there being so many great things available (rice dishes, quinoa, beans, lentils, etc), we’ve decided to expand our palates a little. I’ve been wanting to try lentils for a while now, and although this wasn’t the kids favorite dish, we did all enjoy it. The combination of seasonings was really enjoyable, and it was a nice change.
Quinoa and Black Beans
We had this for supper last night, together with Salsa Chicken and let me tell you, I’m really looking forward to having the leftovers for lunch. Before this past summer, I’d never had quinoa (pronounced keen-wah) is like a gluten-free super food. It is loaded with protein and other vitamins & minerals. It cooks up really quickly, and depending on the seasonings used, can be mild, spicy, sweet or savoury. Baked Beans
I was looking for a side dish the other day, that I could make relatively quickly, but tasted great. This one was definitely the right thing! I’ve never tried making a baked bean dish that was canned beans “kicked up” a notch, but I know I will be doing it again. I used Bush Beans, which, if you check their FAQ page, you will see are gluten free, dairy & casein free. (Some of their beans are not gluten-free, be sure to read all the labels!)
Cooking With Kids – Mexi-Bean Dip
Wow, this last week has been a busy one! We never even got around to doing our Cooking with Kids in time for Monday this past week. Sorry about that!
