Waldorf Inspired Quinoa Salad
This salad isn’t a Waldorf salad in the traditional sense, but it takes a lot of the same great flavours of a Waldorf salad, and combines it with the power-house seed, quinoa. I made this for supper one day while we were having BBQ beef ring and potato salad, it was like summer. So great to get some of those lighter, make-ahead-salad meals in, now that the weather is finally warming up. This salad was fantastic the up until the 3rd day, and then it was gone. But, the apples did not brown, the yogurt dressing did not get runny, … Continue reading
Gluten Free Falafels
Something you may not know about me (or maybe just forgot, haha). I have the WORST memory. I can’t remember movies we’ve seen, places we’ve been, people we’ve met, or places we’ve been. It’s rough. I really feel sorry for my husband. He’ll try to talk about something from our dating days, and I can’t remember it. Seriously, unless it involves something bad (weird how that happens, huh?), my memory just can not hold all that information. If there is no photographic evidence, it pretty much didn’t happen in my mind. I do remember when he lived on his own … Continue reading
Refried Beans
I love foods with a Mexican flare. I like the cheeses, the spices, it’s all good. And like most things, homemade refried beans taste better than those that you can get in a can. Those in a can, they do when you need to add them to a casserole, or something like that. but, I wouldn’t want to eat them alone, with chips. THESE beans, however, topped with a little cheese (melted, maybe?), and you’re ready to dig in with your tortilla chips. Be warned, they do take a while to make, but they can be made either on the … Continue reading
Aine’s "Real Honest to Goodness Noodles"
I love this blog. I have met so many wonderful people through blogging. I’ve met other bloggers (what a great community we have here on the World Wide Web), and fantastic readers that are getting excited about the potential that their kitchen holds for them. Some were feeling overwhelmed, beaten down, or discouraged with their gluten-free diet, but after looking through the recipes here, and on other blogs, they have become more adventurous in the kitchen, and have taken on converting some of their favorite recipes to gluten-free themselves. This recipe is the result of just that. My friend Aine … Continue reading
Greek Quinoa Salad
Yum! If I had the ingredients on hand, I’d make this salad again. But, I don’t have any feta cheese. Or quinoa right now either. Shoot, guess I’ll just have to be patient and wait a little longer. We (read “the adults”) really loved this salad. I can’t wait until the summer, when I know I will make it more often. It is a great cold salad, although I’m sure if you were impatient, you could eat it warm as well. ShareTweet0b17e69ed245a0300ec53b919254c720Share via email
Gluten Free Chicken Stir Fry
Back in the pre-GF days, my husband & I enjoyed having stir fry for supper. It became a thing of the past with the Celiac diagnosis, because I only knew how to make stiry-fry using the little packages of seasoning mixes that you find in the grocery store. You know the ones…just add water and wa-la, your sauce is prepared. And now, over 2 1/2 years later, we’re finally enjoying chicken stir fry on top of brown rice again. The kids, not so much, they hate rice. I don’t know why, but hey, there could be worse things (like the … Continue reading
Moroccan Chicken and Lentils
We’ve always been a “meat and potatoes” kind of family. But, with there being so many great things available (rice dishes, quinoa, beans, lentils, etc), we’ve decided to expand our palates a little. I’ve been wanting to try lentils for a while now, and although this wasn’t the kids favorite dish, we did all enjoy it. The combination of seasonings was really enjoyable, and it was a nice change. Quinoa and Black Beans
We had this for supper last night, together with Salsa Chicken and let me tell you, I’m really looking forward to having the leftovers for lunch. Before this past summer, I’d never had quinoa (pronounced keen-wah) is like a gluten-free super food. It is loaded with protein and other vitamins & minerals. It cooks up really quickly, and depending on the seasonings used, can be mild, spicy, sweet or savoury. My husband and I enjoy it as a side dish, and the kids are getting used to it (they seem to be potato & noodle lovers, rice and quinoa are … Continue reading
Canning Homemade Salsa
Are you all set & ready to go? Are the tomatoes turning red faster than you know what to do with them? Well, that’s not really my problem this year. I’ve been making homemade salsa for quite a few years already. I used to make it into taco sauce (few more steps involved) because I didn’t like chunky things. Now, I have gotten lazier matured my palate, I don’t mind having the peppers & onions in chunks (although, it’s still in small chunks, thank goodness for a food processor). My Mother-in-law gave me this recipe years ago, and although I’ve … Continue reading
Gluten Free Blueberry Zucchini Bread
Hello, everyone!! I hope you’ve all been having a fantastic summer. I’ve been working very hard on not saying “I’m Sorry” for the lack of posts this summer. I’ve ready many blogs where each post is started with “I’m sorry for not posting more”, and I’m trying really hard to not feel guilty about the number of posts that I’ve posted this summer. I will try to post more regularly in fall, but we’ll see what fall brings, and cross that bridge when we get there. As for us, our summer has been a full, busy, enjoyable summer so far. … Continue reading
