				<content:encoded><![CDATA[<p>I have always been a huge fan of<a href="http://www.jamieoliver.com/" target="_blank"> Jamie Oliver</a>. It all started back when he was just a bachelor with a neat flat and a scooter. Now, he&#8217;s grown into a family man on a mission to make the world a better place, one lunch cafeteria at a time. So, he is a man I am impressed by, and when I am looking for inspiration for a meal, and feel stuck, or don&#8217;t have many ingredients in the house, I look to him and his recipes. Many of his recipes use everyday, down to earth ingredients, making it easy to find an answer to those &#8220;What&#8217;s for supper&#8221; days. In this case, the question is &#8220;What to do with this stewing beef?&#8221;. I had bought a package of stewing beef, but didn&#8217;t feel like making my regular stew (but the next time I do, I will be sure to blog that recipe, it has a beautiful brown gravy, loaded with veggies &amp; topped with gluten-free dumplings. You&#8217;ll like it, I promise.)</p>
<p>Anyway, Jamie Oliver had an answer to today&#8217;s question. He has a recipe for a yummy looking <a href="http://www.jamieoliver.com/recipes/beef-recipes/beef-ale-stew-1" target="_blank">beef and ale stew</a>, which I used as inspiration for this dish. I made a few simple alterations along the way, but either way, I think you&#8217;ll enjoy it.</p>

<p>Serves 4-6</p>
<p><span style="text-decoration: underline;">Ingredients:</span></p>
<ul>
<li>1 lb stewing beef, cut into 1-inch pieces</li>
<li>2 dried bay leaves</li>
<li>1/2 cup chopped onion</li>
<li>1 large stick celery, chopped</li>
<li>1/2 cup chopped carrots</li>
<li>2 Tbsp olive oil</li>
<li>355 ml gluten-free beer (I used <a href="http://www.redbridgebeer.com" target="_blank">Redbridge</a>, which is made from sorghum)</li>
<li>1/2 tsp salt</li>
<li>1/4 tsp pepper</li>
<li>14 oz. tin of crushed tomatoes</li>
<li>1/2 cup long grain white rice</li>
</ul>
<p><span style="text-decoration: underline;">Directions:</span></p>
<ol>
<li>In a <a href="http://www.canadiantire.ca/AST/browse/8/KitchenBath/1/Cookware/PotsFrypans/PRD~0421380P/KitchenAid+3.5-quart+Round+Cast+Iron+Pot+with+Lid.jsp?locale=en" target="_blank">cast iron pot with a lid</a>, heat the oil over medium heat. Saute the onions, celery, carrots, salt, pepper and bay leaf for 10 minutes.</li>
<li>Add the stewing beef, gluten-free beer and crushed tomatoes. Stir and bring to a boil.</li>
<li>Once boiling, cover with the lid and turn the heat down to low. Simmer for 3 hours.</li>
<li>Add the rice, stir, cover, and simmer an additional 30 minutes. Season with salt &amp; pepper if necessary.</li>
</ol>
<p>Alternately, you can cook the stew in a casserole dish in a 350° oven. Cooking times will remain the same.</p>

<p>I have a confession. For the first 30ish years of my life, I was a picky eater. We&#8217;re talking no onions. No peppers. No mushrooms. And definitely not any different kinds of cheeses &amp; veggies. Phew&#8230;now I feel better. <img src='http://www.thebakingbeauties.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>The good news is, I made a choice to try new things, new flavours, and new textures. It doesn&#8217;t mean I like them all, but at least I&#8217;m willing to try. The other day, I had a salad with goat cheese on it. I don&#8217;t think I&#8217;ve ever had goat cheese before, but boy, was it ever good! It definitely won&#8217;t be the last time, I will have to look for ways to incorporate that into a dish.</p>
<p>I like to have my kids try new things too. They don&#8217;t have to like it, but they have to try it. My daughter doesn&#8217;t like rice, and she loved these stuffed peppers, well, the filling for them, she wasn&#8217;t a fan of the pepper itself. But at least she tired it. So proud of her. <img src='http://www.thebakingbeauties.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p><strong>Ingredients:</strong></p>
<ul>
<li>1 cup water</li>
<li>1/2 cup white &amp; wild rice mixture (recipe calls for Arborio, but I didn&#8217;t have any at home)</li>
<li>2 green bell peppers, halved and seeded</li>
<li>1 Tbsp olive oil</li>
<li>2 green onions, thinly sliced</li>
<li>1 tsp dried basil</li>
<li>1 tsp Italian seasoning</li>
<li>1 tsp salt</li>
<li>1 pinch ground black pepper</li>
<li>1 tomato, diced</li>
<li>1/2 cup crumbled feta cheese</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 400 degrees F. Lightly grease a baking sheet (or line with parchment paper, I love using parchment paper).</li>
<li>In a medium saucepan, bring water to a boil. Stir in the rice. Reduce heat, cover, and simmer for 20 minutes. Remove from heat and set aside.</li>
<li>Place the peppers cut-side down on the prepared baking sheet. Roast 25-30 minutes in the preheated oven, or until tender and skin starts to turn brown.</li>
<li>While the peppers are roasting, heat oil in a medium skillet over medium-high heat. Cook the onions, basil, Italian seasoning, salt and pepper in oil for 2-3 minutes. Stir in the tomato, and cook for 5 minutes. Spoon in the cooked rice and stir until heated through. Remove from heat, mix in the feta cheese, and spoon the mixture into the pepper halves.</li>
<li>Return to the oven for 5 minutes. Serve immediately.</li>
</ol>

<p>Now onto the recipe&#8230;I LOVE Mexican food, as you may be able to tell from recipes like <a href="http://www.thebakingbeauties.com//2009/04/slow-cooker-chicken-taco-soup.html">this</a>, <a href="http://www.thebakingbeauties.com//2008/10/salsa-chicken.html">this</a> and <a href="http://www.thebakingbeauties.com//2008/07/mexican-style-baked-potatoes.html">this</a>. This recipe is a perfect example of how anyone can prepare gluten-free foods. <li>2 cup instant rice, uncooked</li>
<li>1/2 cup Cheez Whiz</li>
<li>2 cups shredded lettuce</li>
<li>1 large tomato, chopped</li>
</ul>

Directions:</span></p>
<ol>
<li>Brown meat in large skillet.</li>
<li>Add chili powder, chicken broth and water. Stir. Bring to a boil.</li>
<li>Stir in rice and Cheez Whiz. Cover. Simmer on low heat for 5 minutes, stirring occasionally.</li>
<li>Serve topped with lettuce and tomatoes. May be served with chips.</li>

<li>2 cups enriched white rice</li>
<li>4 cups water</li>
<li>2/3 cup chopped baby carrots</li>
<li>1/2 cup frozen green peas</li>
<li>2 tablespoons vegetable oil</li>
<li>2 eggs</li>
<li>Gluten-free soy sauce to taste</li>
<li>sesame oil, to taste (optional)</li>
</ul>
<p><span style="text-decoration: underline;">Directions:</span></p>
<ol>
<li>In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.</li>
<li>In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.</li>
<li>Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.</li>

<p>This rice pilaf was simple, full of flavour &amp; makes a great side dish.</p>

<p><span style="text-decoration: underline;">Ingredients:</span><br />
2 cups long grain rice<br />
1 cup chopped celery<br />
1/2 cup chopped onions<br />
1/4 cup butter<br />
4 cups gluten-free chicken broth<br />
2 teaspoon gluten-free soy sauce<br />
1 teaspoon oregano<br />
3/4 teaspoon thyme<br />
1/2 teaspoon basil<br />
1/2 cup toasted, sliced almonds</p>
<p><span style="text-decoration: underline;">Directions:</span><br />
1. In skillet, saute rice, celery, and onion in butter until the rice is browned.<br />
2. Place in a greased 2 quart casserole.<br />
3. Combine all remaining ingredients; pour over rice.<br />
4. Cover and bake at 325F degrees for 50 minutes or until rice is done.<br />
5. Top with toasted, sliced almonds.</p>
