Easy to Make: Pumpkin Puree

pumpkinpuree

Today I am going to show you how to make something that you will NEED this Fall. If you are wanting to do any baking with pumpkin (and use that Pumpkin Pie Spice you made earlier), you will need some pumpkin puree. Now, I know you can buy this in a can, but really, when you make it from a real pumpkin, it just tastes that much better. Now, I don’t have the ideal pumpkin here, but it works just fine. Ideally, you will want the nice little “Pie Pumpkins” or “Sugar Pumpkins”, which are nice little round pumpkins, perfect … Continue reading

Colorful Grilled Corn Salad

grilledcornsalad

Welcome to August! Wow, where on earth is the summer going? We’ve been having a fantastic summer so far, I just can’t believe how quickly it is flying by. We will need to do some back-to-school shopping soon, I guess. I love buying the new markers, pencils and supplies for the kids, but this year, I’m just not ready to think about sending them back yet. July went by so quickly though, that if I blink twice, August may be past too. We have actually been having a beautiful, hot summer this year. Some years, we have a very cool … Continue reading

Creamy Asapargus Soup

asparagussoup

I know this soup may not look like much, but it is so delicious. The adults loved it, the kids loved it, what more do you need to make a great soup? This soup did have the asparagus tips in there, but you know what? They sink. So, although they were there, they just didn’t want to be photographed. With spring being the time for asparagus, I hope you will give this soup a try, I think you’ll really enjoy it.

Greek Quinoa Salad

greekquinoasalad

Yum! If I had the ingredients on hand, I’d make this salad again. But, I don’t have any feta cheese. Or quinoa right now either. Shoot, guess I’ll just have to be patient and wait a little longer.  We (read “the adults”) really loved this salad. I can’t wait until the summer, when I know I will make it more often. It is a great cold salad, although I’m sure if you were impatient, you could eat it warm as well.

Gluten Free Chicken Stir Fry

chickenstirfry

Back in the pre-GF days, my husband & I enjoyed having stir fry for supper. It became a thing of the past with the Celiac diagnosis, because I only knew how to make stiry-fry using the little packages of seasoning mixes that you find in the grocery store. You know the ones…just add water and wa-la, your sauce is prepared.  And now, over 2 1/2 years later, we’re finally enjoying chicken stir fry on top of brown rice again. The kids, not so much, they hate rice. I don’t know why, but hey, there could be worse things (like the … Continue reading

Canning Homemade Salsa

salsa

Are you all set & ready to go? Are the tomatoes turning red faster than you know what to do with them? Well, that’s not really my problem this year. I’ve been making homemade salsa for quite a few years already. I used to make it into taco sauce (few more steps involved) because I didn’t like chunky things. Now, I have gotten lazier matured my palate, I don’t mind having the peppers & onions in chunks (although, it’s still in small chunks, thank goodness for a food processor). My Mother-in-law gave me this recipe years ago, and although I’ve … Continue reading

Gluten Free Blueberry Zucchini Bread

blueberryzucchinibread

Hello, everyone!! I hope you’ve all been having a fantastic summer. I’ve been working very hard on not saying “I’m Sorry” for the lack of posts this summer. I’ve ready many blogs where each post is started with “I’m sorry for not posting more”, and I’m trying really hard to not feel guilty about the number of posts that I’ve posted this summer. I will try to post more regularly in fall, but we’ll see what fall brings, and cross that bridge when we get there. As for us, our summer has been a full, busy, enjoyable summer so far. … Continue reading

Scalloped Potatoes and Onions

scallopedpotatoes

Delicious scalloped potatoes and onion, that don’t contain cream, milk or cheese. And, they are full of flavour and taste fantastic! I know, it hardly seems possible, doesn’t it? But, it’s true. These potatoes had a fantastic flavour, and everyone loved them. I will definitely make these again.
