Scalloped Potatoes and Onions

Delicious scalloped potatoes and onion, that don’t contain cream, milk or cheese. And, they are full of flavour and taste fantastic! I know, it hardly seems possible, doesn’t it? But, it’s true. Russian Mushroom and Potato Soup

This continues with my confession that I gave last time. I still have a problem with mushroom texture. Yep, I’m not a fan of it. Kinda rubbery. I ate this soup, and enjoyed it too, but I let my kids pick the mushrooms out. First off, the mushrooms that I used were an “Exotic Medley” of Shitake, Oyster, Portabella & Button. There is a mushroom grower nearby, Loveday Mushroom Farms. Delicious Stuffed Peppers

I have a confession. For the first 30ish years of my life, I was a picky eater. We’re talking no onions. No peppers. No mushrooms. And definitely not any different kinds of cheeses & veggies. Onion rings and I go way back. I remember being a small child in the backseat of my parents lime green 2-door Nova, sitting on the parking lot of the A&W, waiting for the carhops to bring our food. Broccoli Soup

I was hungry for a broccoli soup the other day, so my little boy & I went off to the grocery store to find some “trees” for our supper. I have never really had a problem getting either of my kids to eat broccoli, so I knew this was going to be a meal that all of us would enjoy. The recipe that I used doesn’t have any heavy creams added to it, so it really is a healthy soup. Broccoli Apple Salad

I’m sure we’re all familiar with the broccoli & cauliflower salad that sometimes has bacon or raisins in it. This recipe is similar to those recipes, but I think it is bumped up a notch. The dressing is cooked, but don’t let that stop you from making it. It is a little bit more work, but the dressing is SO delicious, you won’t regret it! Trust me! About 12 years ago, when my husband (then boyfriend) and I went to a restaurant and ordered nachos, they asked if we’d like the guacamole with it. We both had no idea what it was, so we asked the waiter. His response was “Ah, it’s green stuff…you probably won’t like it”, so we stayed away from the guacamole. Balsamic Roasted Red Potatoes

Fresh Tomato Soup

We’ve now pulled the tomato plants in the garden. Frost set in last night, and we didn’t want to bother with covering them to prevent them from freezing. But, we did get our fair share of tomatoes from them before pulling them. This recipe is one of the examples of what we’ve done with them.
