2 slices of gluten free bread (there are many commercial brands available, or use your own homemade bread)
2 tablespoons softened butter
1/2 cup shredded mozzarella cheese
1 heaping tablespoon pizza sauce
about 2 tablespoons thinly sliced and chopped gluten-free pepperoni
Preheat a frying pan over medium heat.
Butter one side of each piece of bread. Place one slice of bread, buttered side down, in the frying pan.
Stir together the shredded cheese, pizza sauce, and pepperoni until well mixed. Spoon the mixture onto the slice of bread in the frying pan, being sure to press it down and spread it over the entire slice.
Top with the second slice of bread, with the buttered side up.
Once the bottom slice of bread is nicely browned, flip the sandwich over, and continue cooking until the second side is nicely browned and the cheese has melted.
If packing in container to send in a lunch kit, be sure to let it cool to room temperature before placing in container. Otherwise you will have a soggy sandwich.
I use gluten-free turkey pepperoni sticks for this recipe, as well as for snacks in my kid's lunches. Turkey pepperoni sticks also make a great lunch with some gluten-free crackers, boiled egg, veggies, and cheese.
