Gluten-Free Pumpkin Biscotti

I was so excited when this recipe actually turned out. And not only turned out, but was fantastic! I had tried making biscotti in my pre-gluten-free days, but hadn’t succeeded. This is my first attempt at gluten-free biscotti, and I gotta say, it rocked! Get out that cuppa joe, you’re gonna need it to dip these wonderful sticks of spicy goodness into.       Print a Copy for Future Reference  &nb…

Gluten-Free Pumpkin Bundt Cake

This bundt cake was a real treat to bake & eat. I had not tried making a gluten-free bundt cake before, but this one was moist & delicious! Crustless Pumpkin Pie

I’ve never been a fan of pie. Well, it ends up, I’ve never been a fan of pie crust. This crustless pumpkin pie is gluten free, and will be loved by both “gluten-eaters” and those of us that eat gluten free. This pie was very flavourful, simple to make, moist, and yet held it’s shape well enough, you’d think there was a crust under there.       Print a Copy for Future Reference&nbsp…

Baked Pumpkin Crunch Oatmeal

Oh, so, so good. This breakfast was actually a whole family pleaser, with the kids actually bargaining (we try to do that instead of arguing) over who was going to have the last piece for breakfast the next day. This baked oatmeal can be mixed up the day before, and just popped in the oven in the morning, giving you a nice warm, hearty and healthy breakfast. We topped ours with a little bit of brown sugar and milk, but it would have been fine on…

All-in-One Holiday Bundt Cake

Autumn is just such a beautiful time of year. The air is cooler & crisp. The trees turn beautiful colours that you can only enjoy for a few weeks (or until a wind storm comes along and blows them all off the trees). I also love all the flavours that are in season this time of year. The abundance of apples, cranberries, pumpkin and pecans. Each and every one of those things whispers “Autumn!”, but this cake screams it! This cake…

Autumn Baked Oatmeal

When the cooler temperatures hit us, I like to change up our breakfasts. Instead of cereal and cold milk, it is nice to have a nice warm, stick-to-your-ribs breakfast. This Autumn Baked Oatmeal fits the bill when it comes to that. If you or your family does not like cooked oatmeal, be sure to give baked oatmeal a try, it has a completely different texture. This baked oatmeal includes all the wonderful flavours of Fall. Pumpkin, maple syrup, pec…
